Restaurant Daily News 1 9 Sunday, May 21, 2017 INNOVATION, GREAT DESIGN & PRECISION FOR THE PROFESSIONAL CULINARY WORLD The Breville ® | PolyScience ® Control °Freak™, is the world's first tempera- ture-controlled cooking system to accu- rately measure, set and hold every cook- ing temperature from 86-482 degrees Fahrenheit within plus or minus 1 degree Fahrenheit of stability. In addition to the through-the-glass pan temperature sensor, the Control °Freak features a temperature probe that communicates and controls the precise temperature of water and fat-based liq- uids, making potentially challenging tech- niques/recipes such as egg poaching, hol- landaise, curds and meringues easy by controlling the temperature of the ingredi- ents themselves. This opens up the possi- bility of executing more progressive menu options, even with less-skilled labor. The machine can record recipe tem- perature programs for future use with features such as: hold a temperature indefinitely (72 hours with a timer), automatically "Keep Warm" (140 degrees Fahhrenheit), "Repeat Timer," and "Stop Cooking." These programs can be shared with other Control °Freaks thanks to a custom USB port and stick. The ability to create and store temperature programs allows for "one touch operation," yielding a consistent result no matter who's cook- ing. USB functionality allows tempera- ture programs to easily be shared across multiple cookers and locations. A dual-fan system efficiently and effectively cools all the machine's inter- nal components, extending the life of the Control °Freak and eliminating overheating. The unit comes with a protective travel case for safe transport. The Control °Freak carries a two-year limited product war- ranty. EXPRESS CATERING – STERNO LIGHTS THE WAY Thaddaeus Smith, Executive Chef at Sterno Products, answers a few questions about the benefits of getting customers into this profit-generating enterprise and about the new tools Sterno provides to help operators get an Express Catering operation up and running. RDN: What is Express Catering? TS: Express Catering is the fastest grow- ing segment in foodservice. We've seen national chains and independent restau- rants expand their sales easily with Express Catering. It basically is a service extension of an established restaurant (or caterer) that is designed to work in con- cert with day-to-day operations and pro- vide an additional stream of revenue. RDN: How does Express Catering bene- fit customers? TS: The great thing about Express Catering is that it provides the opportuni- ty to host an event (business lunch, fami- ly gathering, holiday party, etc.) and enjoy the great food and experience of their favorite restaurant at their home, place of business or in any setting of their choice. Everything the customer needs to host a memorable group dining for busi- ness or pleasure is provided: delicious hot and cold food, disposable/recyclable service items, portable warm- ing units and serving instruc- tions. RDN: Sterno recently launched a new 'Express Catering 5-Step Startup Guide.' Tell our readers about that. TS: Our Express Catering startup guide is an easy tool for you and your con- sumers to use to get this dollar-producing program going. We developed this guide in conjunction with Austin-based Salvation Pizza as we worked with them to get their program off the ground. All of the strategies detailed in the guide were fine-tuned every step of the way. Along with the guide, we've also developed a series of 'how to' flash videos that cover the essentials of Express Catering set-up and safety. Finally, we've launched a podcast series on Express Catering. The first six episodes feature short conversations with Salvation's Pizza's Director of Operations on his journey from day one to launch. RDN: What's the best place for an operator to access the Express Catering startup guide, podcasts and flash videos? TS: The fastest was to access is on our website: sternopro.com/training-cen- ter. We'll also be demoing these great tools at our booth #6223. For more information, go to www.sternopro.com, call 951.682.9600 or stop by booth #6223. THE HOWARD COMPANY DIGITAL MENU BOARDS: TODAY'S TECHNOLOGY BUILT ON TRADITION Since entering the digital menu board field 12 years ago with its VisionQuest™ product line, The Howard Company has watched the digital trend grow from modest promotional video screens to full-blown menu displays showing dynamic and static content. Restaurants now have a multitude of choices in screen size, visual displays and program- ming options that were unavailable only a few short years ago. Key to the Howard product line is its all-inclusive package of screens, comput- ers and software, making the conversion from traditional menu boards to a digital system a relatively simple process. The Howard Company brings its expertise in providing high quality indoor digital systems to the drive-thru lane with the DT Choice Digital Drive-Thru Board. Keeping the tradition of giving restaurants options for their drive- thru lanes, The Howard Company offers outdoor digital screens in one, two or three panel configurations. The digital drive-thru operates on the same software as the indoor; menu changes can be managed from a central office.
