Perhaps it may be due to the temperature of your butter, eggs or dairy – it does matter when baking. But how does one determine what "room temperature" is? Taylor has the answer! The TemPerfect Results products uses color changing technology for per- fect baking results. "Magic" material activates when the ingredients are cold, and when the color "disappears," the ingredient is ready to use. Taylor's TemPerfect collection includes three products specialized for better cooking results: The Butter Tray, model 780, turns orange when cold butter is placed on the tray. Measure marks for every tablespoon is precise without needing the butter wrap. When the tray turns back to white, the butter is at the perfect room tempera- ture so cookies are chewy and thick, not tough and flat. Eggs, milk and other liquids are measured in the Dairy Cup, model 781. The two-cup measuring bowl turns blue when cold and reverts to white at room temperature. Measure marks are mold- ed on the inside of the cup and a pour spout limits messy spilling. The last product is actually a set of ther- mometer rings designed for specific temperature functions. Model 782 Floating Disks are calibrated for com- mon cooking requirements but are typ- ically hard to determine the exact tem- perature. The poach ring is bright pink and turns white at the perfect poaching temperature. Don't worry about scorching milk – the teal scald ring turns white at 180ºF. Are you sure your sauce is simmering? The green simmer ring turns white during the proper simmering temperatures. Rounding out the collec- tion is the blue boiling ring that turns white when your liquids are at the proper tempera- ture. WESTON LAUNCHES NEW PRO-1100 VACUUM SEALER Weston Brands is rolling out some exciting new products for 2015, including the most recent addition to its vacuum sealer line, the Pro-1100. The inability to seal through moisture is a well- known drawback for most sealers. Vacuum pumps draw moisture from foods like meat and fish into their chamber, covering the inside of the bag where you want to seal it. That's why the extra wide 5mm seal bar is backed by 680 watts of power to burn through most moisture, creating a reliable, long lasting seal. Impressive vacuum strength should be a given for any sealer; unfortunately, it's simply not for most. When a vacuum pump isn't strong enough, air pockets are left in the bag, leading to freezer burn.
