Restaurant Daily News 6 3 Saturday, May 20, 2017 INTEGRATED CONTROL KNOWS FOOD LOVES TECH Technological innovations abound in foodservice, bringing food and drink thought leaders to reach new levels of excellence and innovation. Food apps, virtual menus, hydroponic greenhouses with lightning charged irrigation systems – all of these and more are being embraced in an attempt to serve con- sumers the next great taste experience. Along with all of these advance- ments, there are many new improve- ments for the day-to-day operations and management of eating and drinking establishments. After all, good quality fresh food is still the most important ele- ment of any successful restaurant. When thinking about how to employ technology in your brand, you are faced with two broad enhancement options: marketing and operations. To keep a focus on the deliverable – great food – the focus will be on operations: food safety, product prep and product management. Now is the time to invest in cost- effective and labor-saving devices that enhance the safety of the food you serve. Statistically, the majority of health inspec- tion violations are due to only a few easily remedied oversights. Keep cold food cold and hot food hot. Sounds simple, but it is easily among the top three origins of fines issued. Technology is available to wire- lessly monitor, alert and report temperature ranges not only in refrigeration and hold- ing areas, but directly in actual food prod- uct as well. This should be No. 1 on your list. You will immediately see a reduction in labor, productivity, food waste and a vast improvement in food quali- ty. When shopping for a system, you should look for a fully inte- grated system that can centralize your reporting and management function. One of the best sys- tems on the market is the Temp Minder series from Integrated Control. Numerous sensors track tempera- tures wirelessly to provide an accurate pic- ture in real time of your temperature man- agement requirements. Temperature abuse is not only an issue in holding, but in serving and preparation as well, so be sure to have a good ther- mometer on hand. Here, it is best to invest in one that not only gives you an internal temperature, but one that could also alert you to acceptable temperature ranges of cooked and held product. It should also offer a cooling cycle monitoring option for cook and hold and sous vide preparation. The device should also record temperatures and corrective actions. This is a perfect first step in employing a HACCP program in your facility. Scan'n'Temp works with the Temp Minder line to provide an inte- grated reporting plat- form that not only provides accurate real time and historical information, but also affords traceability options critical to managing vendors and your operation. A nominal financial investment will pay off in dividends by ensuring the delivery of safe, fresh, great tasting food. Food loves everything that technology can bring to the table for a long lasting affair to remember. Turn on the tempera- ture for a winning relationship today and visit Integrated Control at booth #1268 to fall in love with fresh technology. Carla's Pasta is a woman-owned, family- run manufacturer of frozen filled pasta and pestos. Since pasta and pesto are the only products we manufacture, our entire focus is dedicated to making the highest quality consistent products in these cate- gories. We use only the best ingredients available: durum and semolina flours, eggs and clean ingredients with no trans fat. We don't use colors for our flavored pastas. Our pastas have a resilience not found in most competitors' pastas. It maintains its character under the pressure of foodservice conditions while remain- ing delicate enough to meet the chal- lenges of any chef preparing a single gourmet meal. And yes, there really is a Carla. She is the Founder, President and driving force behind our reputation for authentic Italian taste. She was born and raised in the Piedmont region of Italy and came to this country in 1968. In 1978, she opened a small, 1,800 square-foot retail pasta shop in Manchester, Connecticut. Soon, local restaurant owners were buying her pastas to serve in their establishments. In 1982, Carla closed the doors to her retail store and moved into a USDA-approved 6,000 square-foot facili- ty. At this time, she began to distribute her products through foodservice dis- tribution channels. The company contin- ued to flourish, and by 2002 Carla's moved to a new 50,000 square-foot facil- ity in South Windsor, Connecticut, mak- ing products the best way we knew how with the same attention to detail as we did in 1978 utilizing Italian equipment. We now manufacture over 250 different pasta and pesto products. Today, Carla's Pasta still resides in the South Windsor plant, but in 2013, complet- ed two large additions, expanding the plant to just under 100,000 square feet. We are a USDA, HACCP compliant, BRC 'AA' rated facility following green manufacturing practices cen- tered around our 300 kilowatt fuel cell that produces enough electricity to power about 425 homes via a chemically con- trolled reaction with domesti- cally derived natural gas. Carla still runs the company with the same level of passion and perfection as always. Today, Carla's passion and drive have been instilled in her two sons, Sandro and Sergio, whose new ideas and enthusiasm are helping to move the com- pany forward. The sales force echoes this passion in presenting our products nationally. For more information, visit www .carlaspasta.com, call 860.436.4042, email abiel@carlaspasta.com or stop by booth #707. AN EXCITING YEAR AHEAD FOR GREAT RIVER ORGANIC MILLING Great River Organic Milling (GROM) is nestled in the beautiful bluffs and val- leys of west central Wisconsin, a stone's throw from the Great Mississippi River, and has been milling organic grains on its granite stones for almost half a century. Ancient grains have always been a part of the business, but this year you'll see much more from GROM. Its knowledge of teff has for many years made it the 'go to' company for this special grain, and it continues to develop this highly nutritious and ver- satile grain with products like its Teff Flakes and T-Crisps™ 'Teff Crisps.' These new products are receiving fan- tastic reviews from cereal manufactur- ers, nutrition bar companies and anyone looking to introduce an ingredient that will boost the nutritional content of their blends/products. In addition to its bread flours, bread blends, pancake mixes and hot cereals, it has Einkorn flour launching this year. Respected as the most ancient wheat in the world, it's being recognized again for it's tremen- dous amount of protein, without the gluten proteins found in modern com- mercial wheat. For the consumers who want real goodness and health, and especially those who can tolerate spelt but not modern wheat, Einkorn will be a fresh answer to add to their diet.
