RDN: How are electronics changing kitchen equipment? EM: Electronic components in restaurant equipment are becoming more advanced because of the ease of use they provide. These 'smart' pieces of restaurant equip- ment allow for better efficiency and con- sistency during operation. They also make it easier to train staff and produce less waste and energy, which means a higher bottom line as a business owner and operator. RDN: As a brick oven manufacturer, how do electronics in equipment affect cooking? EM: Electronics make cooking easier. For example, in many pizzerias, working with wood ovens is a guessing game with heat and time. You really have to watch the product closely. Five seconds too much can make the difference between a perfect pizza and a burned one. RDN: When it comes to ovens, why are electronics beneficial to the operator? EM: The range of customizable settings – such as the ability to plug in exact time and temperature requirements for your dough – is the best benefit for the opera- tor. You can plug that information into a smart oven and get consistent pizzas in one rotation. There's no need to turn the pizzas with a peel, which means much less chance of burning or putting a hole in the pizzas. RDN: Tell our readers about Marra Forni's smart ovens. EM: Marra Forni's smart ovens are built for high performance with energy efficiency, precise control, cooking consistency and ease of use at the core. The decks of our smart ovens are made from authentic Italian refracto- ry bricks that provide low thermal con- ductivity for greater energy efficiency. We can provide technical support any- where in the U.S. RDN: Can these ovens withstand rigor- ous use? EM: We've stress-tested the ovens by pumping as many pizzas as possible, back-to-back, in our RT 150 Rotator oven. We made about 250 pizzas in an hour, all cooked beautifully. RDN: What are their bene- fits for the operator? EM: Marra Forni's smart ovens such as the Rotator can help cut labor and energy costs, while offering superb cooking consistency. They are gas-fired at 84,000 BTUs, unlike competitor ovens, which typically run between 110,000 and 140,000 BTUs and need 120 volts to run. This means lower monthly bills and less waste from broken or burned pizza. All this adds up to more money for you and your business! It's no surprise the Marra Forni Rotator smart oven is our best seller because it's the most energy-efficient and customiz- able rotating smart oven on the market. FALAFEL POWERS UP YOUR MENU WITH A POPULAR MEDITERRANEAN PLANT-BASED PROTEIN Mediterranean has been forecast to be one of the Most Influential Regional Cuisines for 2017 with falafel named the break out star of that trend. In its most recent Foodservice Handbook, Winsight dubbed falafel a "wide- spread, QSR ready" trend and should be a "new focus for Fast Casual." "We couldn't agree more," declares Peter Parthenis Jr., Grecian Delight President & Chief Executive Officer. Sustainable, plant-based proteins are growing into must-haves in the eyes of many of today's restaurant patrons. QSR Magazine even declared that plant-based proteins "are increas- ingly becoming an integral ingredient in many menus. Lead by a desire for sustainability and more healthful eat- ing and a key tool to appeal to a younger demographic." Surprising to some, it has not been vegetarians driving the rise of plant proteins. In fact, the number of vege- tarians in the U.S. has not changed sig- nificantly in the last decade. Rather it is the Millennials and Gen Z con- sumers that are driving the demand for plant-based meals as they are often less expensive, better for the environ- ment and for animal welfare – all things highly valued by younger con- sumers. "We see falafel as the perfect new addition for restaurants, as it is a two- for-one win. You combine a desirable plant-based protein and authentic Mediterranean favorite in one deli- cious menu solution," explains Parthenis. To help restaurants capital- ize on this growing demand for plant- based protein and ethnic cui- sine, Grecian Delight has expanded and enhanced its falafel line-up to now include a dry mix, dough, IQF fritter and pre- cooked puck. "Our reformulated dough shares the same great vegan formula as our new authentic IQF fritter," states Parthenis. The Grecian Delight devel- opment team visited a number of restaurants across the Mediterranean to better understand and capture the authentic flavor of the region in this new recipe. "Grecian Delight now offers a complete line-up of falafel products and capabilities to meet the needs of every menu and kitchen prep requirement in restaurants today," declares Parthenis. Falafel is a versatile product that can be used as a vegetarian protein snack, appetizer, sandwich or salad. "Our chef has created a range of exciting traditional and contemporary menu applications for falafel," states Parthenis. Many of these ideas and more informa- tion on bringing the power of falafel to your menu can be found at www.grecian delight.com/falafelpower.
