KNSD: What's new at Totally Bamboo? TS: As usual, we have several new intro- ductions. We are known for our bamboo innovations. KNSD: Do you have any favorites? TS: What I'm particularly excited about isn't really new, but expanded and rebranded. We are growing our Greenlite DWS (DishWasher Safe) line by intro- ducing nine additional designs. Greenlite DWS is dishwasher safe because of the way we construct it. Since its 2008 initial introduction, we've had great reviews and a growing, very dedicated fan base. We get letters from people who love these boards. The online reviews are consistently highly rated and overwhelmingly positive. KNSD: You get letters? Any complaints? TS: Yes, those land on my desk too, and they're very informative. We learn from the occasional complaint letter and one star reviews. For instance, we learned we needed a better description of how and why you need to season a new board. We have added a more detailed description about seasoning on this year's packaging. KNSD: How do you season a bamboo cutting board? TS: You only need to do it after the ini- tial washing, somewhat similar to "sea- soning" a new cast iron skillet. The first time you machine wash a new Greenlite DWS cutting board, the hot water will raise up tiny fibers. This is a byprod- uct of the sanding procedure. All that is required is to brush them off with a damp sponge. If your water is especially hard, this may need to be repeated a second time. KNSD: What is the difference between Greenlite DWS and other dishwasher safe cutting boards? TS: Currently, the dishwasher safe bam- boo cutting boards on the market are either polyproline plastic, or composite boards, neither of which give the 'feel' of real wood under your knife (or in this case, real bamboo!). Based on online feedback, this is the No. 1 advantage to our Greenlite DWS line: the natural material of the cutting surface in regard to the cutting or knife 'feel.' KNSD: Can you explain the engineering process and why the Greenlite DWS boards are dishwasher safe? TS: Tri Ply con- struction is part of the formula of making a bamboo board that's dishwasher safe. Unlike lower cost boards, we only use mature stalks (over five years of age) and we take the extra time to stabilize our raw material for up to three weeks. Once stabilized, the raw material is precision milled to exacting tolerances, resulting in a perfectly balanced width and height of each individual strip (think barbecue skewer). Because the strips are so thin, this micro-lamination (trademark patent-pending) allows the bamboo strips to expand and contract without warping or causing splits along the glue line.
