In fact, we're already getting calls from buyers and news media, asking for a sneak peek. We're going to debut a number of new products this year, but the one we're most proud of is our new Z'Fogless Water Mirror. It's unlike anything on the market right now. It's even been selected as a final- ist in this year 's IHA Innovation Awards and we're confident that it's going to take top spot. SOUS VIDE IS A MAINSTAY FOR HOME COOKS As sous vide cooking gains in populari- ty among home cooks, the water oven is quickly becoming a countertop basic, right alongside the microwave. It's easy to see why: "There could not be a more con- venient way to cook: Just push a button, drop the plastic bag in the water, and walk away."―Food & Wine "The long slow cooking can turn tough cuts of meat incredibly tender. We followed the simple setup instruc- tions and cooked fish, chicken and steaks―all with perfect results."―Cook's Illustrated "One of the simplest and most foolproof methods for cooking just about anything to its exact level of per- fect doneness."―Popular Science For those unfamiliar with the technique, sous vide relies on a water bath heated to a precise, consistent tem- perature to cook food that is vacuum- sealed in airtight pouches. The most popular sous vide appliance for home cooks―the SousVide Supreme water oven―was launched in 2009 by Eades Appliance Technology. Prior to that, the cumbersome apparatus used in restau- rants was both impractical and too expensive for consumers, and do-it- yourself methods that relied on thermo- stats and pots of boiling water made sous vide cooking time-consuming, and produced mixed results. Designed as all-in-one, counter- top appliances for the home kitchen, the SousVide Supreme line of water ovens makes it possible for even unskilled cooks to easily produce meals of excep- tional taste and quality with little hands-on time. Every type of food, from steaks to poultry, seafood, eggs, vegetables―even liquid infusions―is cooked with perfect results every time. Once the water oven's temperature is set, its technology leaves no room for error. A sophisticated temperature con- troller keeps the water bath within one degree Fahrenheit, so food cooks to the desired degree of doneness from edge to edge, while flavors and textures are enhanced, and airtight cooking pouches preserve nutrients. Home cooks proved hungry for the SousVide Supreme water oven's hands-off convenience and ease-of-use, as well as the benefits sous vide cook- ing provides. Sales have grown expo- nentially worldwide, with particular concentration during the end-of-year gift giving season. While up-to-the- minute foodies clamored for the prod- uct early on, the water oven has now caught the attention of everyday cooks, who use it on a frequent basis. In response to the strong demand, SousVide Supreme has expanded its product offerings to encompass every- thing needed to cook sous vide, includ- ing water ovens, vacuum sealers, food- grade cooking pouches and a complete range of cook books. Having access to an entire line of simple, high-quality sous vide products makes the cooking technique easy for new consumers to adopt and incorporate into their cooking routine. For retailers, the expanded items offer up-sell and educational dis- play opportunities, while driving ancil- lary sales and repeat purchases.
