KWIK'PAK FISHERIES LAUNCHES NEW RETAIL WEBSITE Kwik'Pak Fisheries is pleased to present its new retail website, www.kwikpak salmon.com. This highly anticipated website enables customers to purchase Wild Yukon River Smoked Salmon products 24hours, seven days a week. Kwik'Pak's product line consists of Traditional Yukon Keta Strips, Smoked Yukon Keta Candy, Garlic & Pepper Infused Smoked Yukon Keta and Old Style Smoked Yukon Keta. People were always asking, "Where can we buy this in our area?" Now anyone in the United States has access to these products. Kwik'Pak Fisheries is a communityowned business that was founded in 2002 to provide economic opportunities to fishermen and women along the Lower Yukon River of Alaska. In many cases, this is their only income opportunity for the year. Today, these communities are primarily Yupik Eskimos, Alexian's 23 pate and mousse products are made from recipes that call for all natural ingredients in their original, elemental form. Alexian's award-winning patés aren't the only aspect of the company that's environmentally friendly. Both the Rain Forest Alliance and Forest Stewardship Council certify the materials used in Alexian's paper packaging. That means the paper used to create the Alexian packages you see at the grocery store are made using sustainable farming and production practices that don't harm the environment. The Rainforest Alliance works to conserve biodiversity and ensure sustainable livelihoods by transforming land-use practices, business practices and consumer behavior, according to the organization's website. Certification from the Forest Stewardship Council supports responsible forest management worldwide, according to the group's website. Products whose ancestors settled in the region some 10,000 years ago. Kwik'Pak's wild Yukon River Keta salmon are unique in one very key aspect: they have roughly three times the Omega3s of any other wild salmon in the world. That's because the Yukon River is more than 2,000 miles long. In preparing for their journey upriver to spawn, these fish must store up vital nutrients and fats including beneficial Omega-3s. When they're caught just as they enter the river, that's when their oil content is at its peak. Kwik'Pak's facility is strategically located at the mouth of the river. n JUNE 2013 n GOURMET NEWS verified by the council are reviewed from the forest all the way through the supply chain, meaning the label ensures each product is responsibly harvested from council-verified sources. So what does this approval mean to lovers of Alexian's all natural patés? Simple: Buying Alexian patés means supporting not just all natural food production, but also responsible forestry. Alexian began in the Black Forest of Germany, in the 16th century. This is where the earliest members of the Groezinger family were first known to be associated with the creation of outstanding meat products. The Groezinger of our generation was Ewald, Alexian's founder, who sought to introduce his culinary heritage to America. For more information, visit booth 361 at the 2013 Summer Fancy Food Show or check out www.alexianpate.com. The other key to the company's product uniqueness is the fact that they are 100-percent traceable to the source. In 2009, Kwik'Pak entered into a pioneering partnership with the global food traceability company, Trace Register, LLC, to develop a full traceability system that would give consumers the ability to trace their salmon back to the area where it was caught on the Lower Yukon River. What happens when a personal chef and caterer actually embraces the food diversity of her clientele? If you're Maggie Radzwiller, you try to find a way to have an even greater impact to the planet by listening to what people really want and need. When several of Radzwiller's personal clients began asking for vegan, gluten-free meals that actually tasted good, she recognized an incredible hole in the retail marketplace. She developed Maggie's Conscious Vegan Cuisine ― vegan, gluten-free meals in a BPA-free jar that can be safely microwaved in just four minutes and then served proudly knowing they're serving high-quality nutrition. Radzwiller said, "There are supposedly healthy vegan and gluten-free meals out there, but check out those labels! There can be as much as 845 milligrams of sodium or 23 grams of fats in many of the current offerings." Not adding sodium or oils is what sets Maggie's Conscious Vegan Cuisine apart from the competition. The team at Maggie's believes adding sugar, salt, or oils isn't necessary if you begin with quality ingredients and then season with an abundance of fresh herbs. Maggie began betting that consumers would read the labels, love how each of the products are based on the cuisines of the world, and then make the conscious decision to add the product to their incredibly busy lives. Her bet paid off. In its very first appearance, Maggie's Con- scious Vegan Cuisine was recognized as one of the top five products at Expo East in September (out of 1,500) by Natural Foods Merchandiser/New Hope 360. Quite frankly, Radzwiller is banking on stores such as Whole Foods to realize that she has exceeded the core values for an allin-one product. (She is currently approved for Whole Foods' Southern Region distribution and is hopeful to make it in all Whole Foods stores.) In fact, Rip Esselstyn, author of the Engine 2 Diet, has been the motivating factor for the line. Maggie and Rip met several years ago and a mutual admiration transpired. His 28day challenge inspired her to create a line of products meant to turn that challenge into a lifelong support system for a world that has become far too busy to put a healthy meal on the table.
