EXPRESS CATERING: STERNO LIGHTS THE WAY An interview with Thaddaeus Smith, Executive Chef at Sterno Products. FEN: What is express catering? TS: Express catering is the fastest growing segment in foodservice. We've seen national chains and independent restaurants expand their sales easily with express catering. It basically is a service extension of an established restaurant (or caterer) that is designed to work in concert with day-to-day operations and provide an additional stream of revenue. FEN: How does express catering benefit customers? TS: The great thing about express cater- ing is that it provides the opportunity to host an event (business lunch, family gathering, holiday party, etc.) and enjoy the great food and experience of their favorite restaurant at their home, place of business or in any setting of their choice. Everything the customer needs to host a memorable group dining for business or pleasure is provided: delicious hot and cold food, disposable/recyclable service items, portable warming units and serv- ing instructions. FEN: Sterno recently launched a new Express Catering 5-Step Startup Guide. Tell our readers about that. TS: Our Express Catering Startup Guide is an easy tool for you and your consumers to use to get this dollar pro- ducing program going. We developed this guide in conjunction with Austin-based Salvation Pizza as we worked with them to get their program off the ground. All of the strategies detailed in the guide were fine- tuned every step of the way. Along with the guide, we've also developed a series of 'how to' flash videos that cover the essen- tials of express catering set-up and safety. Finally, we've launched a podcast series on express catering. The first six episodes feature short conversa- tions with Salvation's Pizza's Director of Operations on his jour- ney from day one to launch. FEN: What's the best place for an operator to access the Express Catering Startup Guide, podcasts and flash videos? TS: The fastest way to access is on our website: www.sternopro.com/training- center. We are also demoing these great tools at booth #2273. For more information, visit www.sterno pro.com, call 951.682.9600 or stop by booth #2273. QUALITY CAN'T BE OUTSOURCED What does it mean to be an American company?
