Owners and man- agers of hospitality venues have a responsibility to have appropriate alarms to protect their staff and cus- tomers should the gas leak. Carbon dioxide (CO2) is widely used in beer and soda dispensing. Across the U.S., bars, restaurants, fast food out- lets, hotels, and many other places serv- ing drinks have mini bulk tanks of liquid carbon dioxide. When it's used in our day to day restaurant operation, it's hardly surpris- ing that many people are unaware of the harm CO2 can cause to humans. However, a leak of carbon dioxide will not be detected by humans and could cause injuries, or even fatalities. CO2 is a colorless and odorless gas which is heavier than air. It is typically stored in, or piped through the walls and in the walk-in cooler of a venue, meaning that if a leak occurs in such a confined space the gas will collect rather than be dispersed. Rising levels of CO2 can have increasingly detrimental effects on the human body. Low concentrations affect a person's ability to concentrate and increase the breathing rate slightly, but both of these are likely to go unno- ticed.
