As consumers look for more nutritionally sound snacks and quick meals, chefs now can look at pecans as an alternative to white wheat flour as a fish and poultry coating. Pecans have a meaty, mellow flavor and crunchy texture. They are extremely nutritious, containing high amounts of monounsaturated fats and a protein con- tent of nearly three grams per one-ounce serving. A rich source of fiber (almost 10 percent of the recommended daily value), pecans also provide more than 19 vita- mins and minerals, and are sodium- and cholesterol-free. Pecans are bursting with antioxi- dants, which help curb cardiovascular disease and some forms of cancer. They also are gluten-free and have been approved by the American Heart Association as a recommended heart- healthy food. Look beyond the traditional pecan piece or half in the kitchen. Pecan meal, which has the texture of a coarse flour, makes an excel- lent coating for proteins like chicken or fish. Season the meal, roll pro- teins to coat and oven-bake on a non- stick pan. For more texture, add small pecan pieces to the mix to replicate crunchy "fried" bits. More healthful than frying, baking pecan meal-coated pro- teins also provides a delicious, practical substitute to refined white wheat flour for avoiding gluten sensitivities. Want to give it a try? The results of analysis are displayed as a single "Agtron" number. Many products require little or no sample preparation before being tested, making it easy for multiple users to achieve consistent results. Agtron has experience with many types of food prod- ucts. If, however, your product is unique, the compa- ny offers a Free Laboratory Testing Program. Its staff of application specialists will perform a comprehensive sample evaluation. Samples submitted will receive full spectral analysis to determine the color signature of the product and spectral activity as it relates to the desired index. It uses this information to decide which Agtron measurement system and what specific wavelengths (color mode) should be used.
