Fo o d M a g i c D a i l y M o n d a y, J u l y 1 8 , 2 0 1 6 1 2 PROBIOTICS MARKET EXPANDING AND DIVERSIFYING Mike Bush, President of the International Probiotic Association and Senior Vice President of Business Development for Ganeden, touches on the latest in probi- otic science, consumer trends and formu- lations and applications. FMD: Probiotic research seems to be in the news daily. What research are you excited about? MB: Companies that are investing in sci- ence supporting their strains are beginning to look beyond basic digestive and immune end points and are exploring areas like sports nutrition and performance, nutrient absorption, microbiome support, metabolic syndrome, gut brain connec- tions and even specific sub-categories like kidney, oral and feminine health. FMD: Can you point to findings that would be exciting for food and beverage manufacturers? MB: Before even considering specific clinical findings the manufacturer needs to ensure that the specific strain they are looking at supports safety and efficacy claims via peer reviewed papers. Next, they have to ensure that the strain they are considering for use is stable enough to ensure adequate cell counts at the time of consumption. After checking those two boxes, then they can begin looking for ways to connect the strain's benefits to the product benefits and target market. For example, if the product is focused at the active adult or sports nutrition mar- ket, they should consider a strain that supports protein utilization and protein utilization end points. FMD: Are consumers getting the mes- sage that probiotics are important for more than just digestion? MB: A majority of consumers link probi- otics to digestive health, but as con- sumers become more educated about the link between digestive health and other systemic benefits like immune and inflammatory support and the gut brain axis, there will be a new revolution focusing on gut health as the starting point for overall health benefits. FMD: What are the biggest misconceptions facing the pro- biotic industry? MB: The first is that a probiotic is a pro- biotic. There are hundreds of probiotic products on the market, many of which have billions of cells per serving but completely lack any evidence of efficacy. It is widely understood, at least by the probiotic scientific community, that the efficacy of a probiotic depends entirely on the strain – not the genus or species. There are huge genomic differences between strains, but consumers are being led to believe that one strain of a species is the same as another. The second misconception is that Live & Active Cultures equal probiotics. The Live & Active Culture seal simply means that there were 100 million CFU of yogurt producing cultures at the time of manufacture of that yogurt, not that yogurt contains beneficial, probiotic cul- tures. In fact, that yogurt could be com- pletely devoid of live cultures at the time of consumption and still qualify to use the Live & Active Culture seal. FMD: Are functional foods the future for probiotics? MB: Absolutely. Consumers are tired of taking pills and compliance to supple- ment regimes is low and getting lower. Consumer trends are leaning more towards whole food based products where multiple benefits can be realized, beyond that of a single ingredient in a capsule or tablet. FMD: What do you see happening in the probiotic food and beverage marketplace in the next five years? MB: I see the launch of more broad appeal products that are commonly con- sumed overtaking those of niche, special- ty products. I also anticipate a much higher level of consumer education and loyalty as it relates to the specific strains and the benefits those strains offer. SAVE ENERGY, REDUCE DEFROST CYCLES WITH INTERMATIC'S NEW ICUBE Intermatic has developed the new ICUBE™ Adaptive Defrost Module for commercial refrigeration walk-in freez- ers and coolers. The ICUBE module works with the DTAV40 timer to determine when defrosting a Walk-In Refrigeration system evaporator coil is truly necessary versus a time initiate only approach. The module has four temperature sensor inputs which can accommodate up to four evaporator coils with wiring capability to extend up to 400 feet for remote condensing unit instal- lations. Typical mounting locations are inside of a remote multiplex or dedicated condensing unit, parallel rack system, unit cooler or freezer, or external to the unit cooler or freezer. Typically foodser- vice owners are forced to utilize this type of intelli- gent technology at a very high price point and with an overly complicated control. These types of controls can also be very difficult to program and install, which takes time away from the HVACR tech- nician, and we all know time means money. With the ICUBE, you save time and money by simply installing the Adaptive Defrost Module directly to the existing DTAV40 Defrost timer and run- ning sensing wire from the inputs to the evaporator coils. There is no need to change any other wiring in the system or timer programing. Intermatic provides a unique non-isolated evaporator coil sen- sor with 10 feet of sensor wire and 6 feet of input wire which can be expandable in between up to 400 feet with 20-18ga shielded or unshielded typical field wire for remote condensing unit installations. Intermatic's reasoning for the unique sensor is because it wanted the commercial refrigeration technician to have the ability to run this sensing wire through the existing or same con- duits/raceways from remote rooftop locations to the box cooler/freezer. Additionally, with four sensor inputs the ICUBE Adaptive Defrost Module can expand to accommodate up to four evaporator coils. Commercial refrigeration technicians have been using defrost timers for many years. Sometimes newer technologies and changes in energy standards can create unfamiliar complexities and system recon- figuration.
