Research shows that most con- sumers will overcome their initial hesita- tion and try foods with insect ingredients if they see others trying them. Once they've tried it, the first-time barriers are gone, and they will keep coming back as long as the product tastes good. So as insects are becoming more common in the marketplace, more consumers see them and are willing to try, which leads to more products which leads to more first-time consumers, and so on. There will likely be a tipping point where insect protein becomes commonly accepted in the near future, offering market opportu- nities a wide range of food companies.
