Food Magic Daily Tuesday, July 17, 2018 1 8 Selkirk UL Listed Factory-Built Grease Duct Selkirk ZeroClear ® is an industry lead- ing, round, stainless, modular factory- built kitchen grease duct system with 0- inch clearance to combustibles and an integral two hour fire rated enclosure. It utilizes dense insulation and a round aes- thetic, protective metal outer wall as the integral enclosure. Tested and listed by UL, Inc. to UL 1978 and UL 2221 strin- gent grease duct standards, ZeroClear endures a 500 degree Fahrenheit contin- uous operating test and a severe 30 minute 2000 degree Fahrenheit internal grease fire test, without any breach or structural failure of the duct. The UL 2221 fire test, additionally, engulfs the ZeroClear system for an integral two hour rating (at 1850 degrees Fahrenheit), again without failure structurally or ther- mally. The structural rigors of these tests cannot be passed by a traditional 16 gauge field welded rectangular carbon steel system. Some other benefits of Selkirk ZeroClear are: 1/16-inch per foot slope required vs. rectangular field welded requiring 1/4-inch per foot; no field welding is required during installation for either new or retro work; easier cleaning and long term opera- tional savings; great for pizza ovens, dishwasher exhaust and coffee roasters; lifetime war- ranty; code accepted; interchangeable with Selkirk's other economical non-fire rated grease duct models; can be intermixed with field fabricated rectangular, if nec- essary. Selkirk's kitchen grease duct has been installed in every style of restaurant, whether standing by itself or incorporat- ed into an airport, hospital, university, stadium, casino, hotel or government building. Just ask, and Selkirk will be happy to tell you the specifics. Selkirk Corporation has been a leading man- ufacturer of chimney, venting and air distribu- tion products for the commercial and res- idential HVAC industries for more than 80 years. Selkirk manufactures products in the United States, Canada and Mexico. For more information, go to www.selkirkcommercial.com or call 800.848.2149. English Mfg. is an industry leader in food shield fabrication. For 20 years, English has introduced innovative designs at highly competitive prices. In 2011, English Mfg. introduced the Viper series, which is a fully adjustable sneeze guard created specifically for curved and angled counters. Why curved counters? Why adjustable sneeze guards? Adjustable sneeze guards are being specified more and more because of the flexibility that they offer, and nowadays a lot of those adjustability features are required on beautiful curved counters. To attain full adjustability on a curved counter, a lot of creativity and engineering is involved, and English Mfg. has perfected it and patented it. The main idea behind the unique design of the Viper is full adjustability with fewer adjacent posts while mount- ing seamlessly around a counter. When you eliminate unnecessary posts, you make the guard less invasive and less noticeable, while adding usable counter space and putting more focus on the food dis- played. In addition to its sleek appearance, the Viper is made for the operator to move and manipulate the glass effortlessly. Without using any tools, the guard can be altered to accommodate a full-service or self-service position with ease. Durable 304 grade stainless steel brackets allow for effortless angular adjustment, while subtle vertical tracks hidden behind the post allows each panel of glass to adjust independently. This adjustability feature separates English Mfg.as the only sneeze guard manufacturer to offer a fully adjustable sneeze guard with independent glass height capability. English Mfg. offers many other style sneeze guards that accomplish this same slim look by utilizing narrow, 1-inch diameter stainless steel posts and easy-to-clean tapered flanges. For your next sneeze guard, don't hesitate to call the experts at English Mfg. For more information, go to www .englishmfg.com. Conserving Water without Sacrificing Productivity In recent years, there has been a major push to reduce the amount of water that restaurants and hospitality venues are consuming. This is especially true in areas like California, Arizona and Nevada, where water levels are at an all- time low and they have begun instituting new legislation and penalties for over- consumption of potable water. The biggest issue has been that as you reduce water flow, the cleaning efficiency of the pre-rinses would diminish, resulting in longer cleaning times. The industry has been clamoring for effective, low-flow, high-efficiency faucets and pre-rinses that are driving new innovations. In response to this need, Component Hardware Group recently introduced an innovative ware-washing solution that helps operators to conserve water and energy without sacrificing cleaning pro- ductivity. PowerPulse ® by Encore is Component Hardware's unique solution to these problems. "Our PowerPulse High Efficiency Pre-Rinse Spray Valve utilizes a patented low-flow pulsating jet spray to beat dried baked food residue off of dirty dishes in a record-setting 12 sec- onds," states Ed Whartnaby, Executive Vice President of Sales at Component Hardware. "These findings are backed up by Fisher-Nickel's inde- pendent, third-party testing of our products versus the competition." According to test reports, the PowerPulse 1.05gpm model cleans 43 percent faster than competing models while using 58 percent less water. This means operators will spend less time cleaning dirty dishes and free up their employees to do other meaningful tasks. It also means lower energy costs and overall water usage, as PowerPulse uses just a fraction of the hot water con- sumed by competing models. PowerPulse spray valves are also available in 0.74gpm and 0.65gpm models for additional water savings and may be easily retrofitted to most existing pre-rinse units or ordered as a complete pre-rinse assembly. In addition to the PowerPulse pre-rinse spray valves, Component Hardware also manufactures a broad line of low-flow plumbing fixtures and electronic faucets for both back-of-house and lavatory applications.
