Restaurant Daily News Tuesday, May 23, 2017 4 0 CARLA'S PASTA RECOGNIZED FOR HIGH SAFETY STANDARDS & BEST PRACTICES By Ashley Biel, Project Manager, Carla's Pasta, Inc. Quality assurance at Carla's is verified by independent audits and FDA and USDA inspections. We have earned the British Retail Consortium (BRC) Global Standards for Food Safety Certification in recognition of our high safety stan- dards and best practices in food produc- tion for six years in a row earning an 'AA' mark. We source only the most techno- logically advanced "washdown" equip- ment that produces pasta in the classic Italian method: laminated pasta giving the proper density and texture. The equipment also allows for diverse fill- ing profiles delivered in a consistent fashion. A clean process needs a clean envi- ronment. Our manufacturing facility has been built as a 'clean by design' facility: insulated metal panel walls sitting on stainless steel curbs, walk-on ceilings, cleanable HVAC and controlled "U" process flow. We oper- ate using a fuel cell that provides more than 50 percent of our power as well as emergency back-up, in addition to being an ultra-low emission power source. The fuel cell generates more elec- tricity using less fuel with an unparal- leled electrical power generation effi- ciency of 47 percent. Heat generated in operation is captured and used for pro- cessing or building heat resulting in less dependency on the electrical grid. It emits low CO 2 and virtually zero pollu- tants into the atmosphere. Carla's also recently completed a cooker modification which enhances the cooking capabilities by 15 percent and reduces the water usage by 10 percent over a year's period. The redesigning also reduced the water usage for cleaning by sanitation crews by 5 percent. Along with energy and water reduction, Carla's is also conscientious of waste reduction. The packaging is reusable and recycla- ble. The company constantly monitors current practices while searching for new and innovative ways to keep pack- aging as environmentally friendly as possible. TAKE IT SLOW WITH SEVILLO FINE FOODS Sevillo Fine Foods may have seemed to burst onto the scene last year after win- ning three National Restaurant Association FABI Awards, but the com- pany has been taking it slow since 2001. Sevillo Fine Foods has perfected the art of the slow-roasted tomato. With its proprietary roasting ovens, all natural ingredients and fresh frozen delivery method, Sevillo has become a category leader in foodservice. Sevillo Slow Roasted Red Tomatoes and Slow Roasted Cherry Tomatoes, along with Fire Roasted Artichoke Hearts, each took home prestigious FABI Awards in 2016. This year, two more Sevillo products were honored in the sauces and spreads category. The 2017 FABI Awards were given to Sevillo's new Harissa Sauce and Slow Roasted Sofrito. The new products join the already popular and versatile spreads, Slow Roasted Classic Bruschetta and Mediterranean Bruschetta, both made with Sevillo Slow Roasted Tomatoes. Slow-roasted tomatoes have emerged as an innovative substitute for fresh tomatoes in a multitude of applica- tions. While fresh tomatoes are subject to seasonal flavor and a short shelf life, Sevillo Slow Roasted Tomatoes are fresh frozen with a five-week shelf life once thawed. Sevillo provides chefs and operators a year-round solu- tion for delicious tomato fla- vor. Chefs who have been roasting their own tomatoes love discovering Sevillo products. They find they have the same flavor and quali- ty as their own, but save them countless hours of prep time and oven space. Sevillo products are all natural, with no preservatives. Once slow roasted for intensified flavor and sweetness, they are marinated in a simple recipe of oil, oregano and salt, and then frozen for freshness. Sevillo products offer chefs a simple way to innovate their existing recipes. With products like Slow Roasted Yellow Tomato Wedges and Slow Roasted Cherry Tomato Halves always fresh and ready to serve, chefs can easily upscale any recipe that cur- rently uses fresh tomatoes and delight customers with deliciously unexpected slow-roasted tomato flavor. HEALTH AND HAPPINESS FROM VIKI'S GRANOLA The signature granola from Viki's Foods was created as a delicious, nutritious snack to be enjoyed by Viki's family and friends. Cooking and baking has been her lifelong passion. Viki Sater, Owner and Founder of Viki's Foods, is not only a driven entrepreneur and Viki's Granola's fearless leader, but an innovator on a mis- sion to simplify the way consumers approach their grocery shopping deci- sions by providing healthy-yet-delicious offerings. Viki's Foods was born in 2011, when Viki Sater started baking Viki's Granola from her very own kitchen. Viki, a stay-at-home mom at the time, asked her daughter what she wanted to bring to the school bake sale. Her daughter said, "Granola, please!" Viki, while amused that her daughter wasn't asking for brownies or cookies, thought to herself, "Easy! Granola … coming right up." Viki's Granola was literally eaten right up. It was such a success that there was not even a crumb left behind. What Viki didn't expect was what happened after. Days and weeks following the school bake sale, calls and emails poured in from teachers, parents and even from people in the community who had just heard about the bake sale, all asking for Viki's Granola. You can probably guess how the story goes from here. Viki's Granola was born.
