The handheld ther- mocouple is a data-collecting instru- ment designed to simplify both the recording of food product temperatures and the monitoring of all corrective actions in foodservice environments. The back-office software includes a state-of-the-art database system designed for reporting, analyzing and storing temperatures and allows data to be transferred between the handheld and PC. Featuring a high level of accuracy (±1 degree Fahrenheit) and extended temperature range of -99 degrees to 999.9 degrees Fahrenheit, this multi- purpose thermocouple accepts all Type K thermocouple probes and stores as many as 3,000 temperature records. The database allows programming of up to 300 user-configurable menu items into the software. The water-resistant hand- held features a full color LCD and comes with a five year instrument war- ranty. A protective storage pouch, durable rubber boot, rechargeable bat- tery and lanyard are included in the new HACCP Manager Kit. Therrien, President & CEO, Kitchen Corps, Inc. Every organization eventually experi- ences an interruption to their food service operation, whether from construction, renovation or disaster (fire, flood, hurri- cane, tornado, earthquake, etc.) My company provides temporary kitchen facilities that help organizations get through these tough times without missing a beat. I'd like to share with you a brief his- tory of Kitchen Corps and how we can assist your organization when you experi- ence an interruption in your food services. Throughout my 22-year Navy career, I was responsible for the opera- tion of galley's onboard aircraft carriers as well as in recruiting stations. These galleys were required to provide nutri- tional meals to as many as 5,000 people four times a day. This experience gave me the knowledge to understand the logistical constraints for moving large volumes of food to support thousands of personnel with a nutritious meal. After retiring from the Navy in the early '90s, my love for the food service industry was still strong. So, I decided to spend my time helping fellow food service professionals get through rough times like new construction, renova- tions or disasters. In 1997 I founded Kitchen Corps with the vision of building a great team that provided outstanding temporary kitchen facilities to institutions and organizations anywhere in the country. I'm proud to say that we have accom- plished just that. Kitchen Corps is now one of the nation's leaders in supplying temporary kitchen facilities. For close to two decades, Kitchen Corps has provided temporary mobile kitchens and other food service facilities to organizations that need to keep stake- holders fed. Our clients include jails and prisons, military bases, universities, schools, hospitals, nursing homes, corpo- rations, disaster relief organizations, country clubs and more. Our custom kitchens can serve as many as 9,000 meals per day, or as few as 90 per day, and can normally be on-site and operating anywhere in the U.S. with- in one week of the initial call. Our motto is, "The difficult we do right away. The impossible takes a bit longer." A custom, full service temporary kitchen normally includes: An industrial kitchen equipped with production, prepa- ration, dishwashing, dry storage, and walk-in cooler/freezer areas, production areas that consist of UL listed commer- cial cooking equipment and UL listed hood systems with NFPA certified fire suppression systems, facilities built to meet all international building codes, a guarantee to meet and pass all health codes, and bathrooms, dining facilities, generators, decks, ramps and lift systems upon request. I take great pride in the results the Kitchen Corps team has provided organi- zations and institutions across the coun- try, and I hope you will consider partner- ing with us for your next renovation or unforeseen crisis. We are a Service Disabled Veteran Owned Small Business that relies on its top-notch professionals, strong alliances, and "best practice" management and processes to ensure our clients achieve their temporary kitchen goals and are 100 percent satisfied. KEEP IT FRESH: LEARN HOW WITH ULTRASOURCE Since its founding in 1883, UltraSource LLC has been a key partner to thousands of companies worldwide in the meat and poultry, seafood, produce, dairy, medical, and pharmaceutical industries. As UltraSource begins its 130th year in busi- ness, it continues innovate products and solutions to help grow your business. All products, even complex food products, have their own ideal atmos- phere. Modified atmosphere packaging can be used to carefully control the atmosphere within the package to extend the shelf life. This process changes the existing atmosphere to an atmosphere more suitable to achieve a specific end result. It is a one-time modification before the package is sealed. However, the atmosphere introduced will go through continued changes depending upon the product being packaged. At which point, the mix can no longer be controlled, special films with micro pores or specific permeability properties are used to allow gas to escape from the package. These types of applications are most common with certain produce items that emit carbon dioxide, which will spoil if not allowed to leave the package at a controlled rate. Constructed of stainless steel and anodized aluminum, the Rhino tray sealers are built to operate in wash down environments. At the heart of every Gen III Unit is a perform- ance-proven Tecumseh compressor, built with exacting standards to handle the rig- ors of commercial refrigeration. Ideal applications include walk-in coolers and freezers for commercial end-use markets such as convenience stores, restaurants, cafeterias and fast food outlets. Base condensing unit models are packed with features such as filter driers, a suction-line accumulator, an oversized receiver tank, pressure controls, service valves, a defrost timer and a crank-case heater. Heated receivers, as well as fixed and adjustable condenser fan controls are offered as available options. Generously sized condenser coils ensure that the unit maintains case temperature even when outdoor ambi- ent air temperatures exceed seasonal norms. The open enclosure design improves airflow and contributes to the condensing unit's overall perform- ance and reliability. Gen III Outdoor condensing units are equipped with an easy-to-remove access panel for ready access to the elec- trical panel, compressor, operating con- trols and revised compressor mounting system for improved serviceability. All- in-one service access allows side-by-side installation of units, reducing the time required for maintenance. The oversized receiver tank accom- modates a larger refrigerant charge insur- ing proper system operation over a broad range of ambient conditions. Gen III's compact footprint provides flexibility of condensing unit mounting locations. A premium heavy-duty galvanized corrosion resistant steel enclosure pro- tects the condensing unit's mechanical and electrical components from rain, sleet, snow and other elements that can shorten product life and performance. Three base sizes are available to ensure the footprint is scaled with unit capacity. Single and dual fan models are avail- able ranging from 1/2 to 7-1/4 HP, com- patible with refrigerants R22 and R404A. The Gen III product line includes models tem for wrinkle free packages every time, PLC controls with full color mul- tilingual (English, German, Spanish, and French) touch screens, stepper motor controlled film advance and uniquely designed rewind system elim- inates film breakage, Teflon ® coated sealing plates, and fast, easy tooling changeover requiring no more than a single tool to accomplish product changeovers in less than 15 minutes.
