Unlike other disease-causing bacteria such as E. coli and Salmonella which are usually transient, Lm has the potential to become resident in a processing facility, contaminating products over an extended period of time. Having a pathogen take res- idence in your plant can cost anywhere from $850,000 to upwards of $20 million, not to mention significant damage to your company's brand and reputa- tion. Taking a proactive approach to food safety can help prevent such a devastating event from occurring.
