Restaurant Daily News 6 7 Monday, May 22, 2017 BRED WITH A BROOKLYN ACCENT! Is it any surprise that one of the hottest baby names is "Brooklyn"? Yes, these days Brooklyn is the name to be, the place to be, and for those with guts, the way to be. Damascus Bakeries is all of the above. Since 1930, this third generation family-owned bakery has planted its roots in Brooklyn and baked award-win- ning pitas, lavash and flatbreads, first for its own community, and now for many others. Like many proud parents, Damascus Bakeries has chosen the name "Brooklyn" for its newest baby, Brooklyn Bred ® Bistro Breads – a truly artisanal, naturally fermented line of specialty and innovative flat- breads. "We've been 'Bred in Brooklyn since 1930,' so the name Brooklyn Bred was a natural for us," said David Mafoud, co-Owner and third-generation baker. First out of its ovens have been award-winning pizza crusts, formulated with specialty "00" pizza flour and olive oil, fermented extensively in a control environment for an authentic texture and more pronounced flavor. Says Mafoud: "Pizza is all about the bite, and in Brooklyn, that could be the difference between life and death. Okay, I'm exag- gerating – a bit! But, without exception, in Brooklyn, the success of every great pizza starts and finishes with its crust." In addition to a line of these Brooklyn Bred Pizza Crusts – which can be customized to your favorite shape, size, thickness and formula, including 'Neapolitan' – Damascus has recently intro- duced its delicious and low calorie Bistro Buns, which are "naturally fermented and outspoken on the outside, soft and savory inside – just like a real Brooklynite!" Like the crusts, these square shaped Bistro Buns are offered in varieties – including Country Potato, Sprouted Grains, Olive Oil & Sea Salt – and can be customized to your pre- ferred thickness and size, including the Slider size, or the 20-inch long, pre- perforated Party Size, which are also ideal for commissaries looking to make multiple finger sandwiches with least effort and time. Says Mafoud: "Our job is to provide our customers with sandwich carriers that are creative, culinary, con- venient, and if needed, customized. All of us love a well-bred sand- wich, and the first bite into that sandwich starts with an equally well- Bred loaf of bread!" What's next? "For sure, something else. Breads are part of everyone's dialog these days, and we are all about the Bred. For almost a century, we have been rolling up our sleeves, going back to the basics and creating fresh, outspoken and edgy breads that will speak out to all – preferably with a Brooklyn accent!" IDOA – A RESOURCE FOR EXPORTERS OF ILLINOIS FOOD PRODUCTS Visit the Illinois Pavilion located inside the American Food Fair (North Hall) to see how the Illinois Department of Agriculture (IDOA) supports Illinois food companies. The IDOA sponsors pavilions at selected tradeshows to enhance the visibility of Illinois products. Those food shows include: Restaurant Canada, Foodex Japan, National Restaurant Show (NRA), SIAL China, International Deli, Dairy, & Bakery Show, IFT Show, Americas Food & Beverage Show, SIAL Paris and ANUGA. With a particular emphasis on exports, the IDOA also partners with Food Export Midwest, a Chicago-based administrator of USDA export programs, to help Illinois food companies find opportunities in the global marketplace. With U.S. Pavilions at international tradeshows, trade missions, buyers' mis- sions and professional in-market reps, Food Export Midwest and IDOA work closely with the USDA's Foreign Agricultural Service to introduce U.S. products to the world. Small- and medi- um-sized food companies can leverage these export promotion programs to craft effective export marketing plans and grow their businesses in new ways. Exports, especially in consumer food products, make up a steadily increasing ratio of total U.S. agricultural products. Global consumers trust American food products and appreciate U.S. and state "made in" labels. Kim Hamilton, International Marketing Representative at the IDOA, notes that Illinois companies depend more than ever on inter- national markets, which are growing much faster than domestic opportunities. She observes that, "with a large percentage of the world's population and purchasing power outside the U.S. border, it's impor- tant for companies to look at global opportunities." In 2015, Illinois food and agribusi- ness companies that participated in the IDOA's programs and services reported $54 million in actual sales and $449 million in pro- jected future sales. In addition, Illinois companies that partici- pated in the Illinois Pavilion at the 2015 NRA Show have reported sales exceeding $3.9 million in actual and $7.7 mil- lion in projected future sales. COMARK INSTRUMENTS LAUNCHES BT250KC BLUETOOTH POCKETHERM WITH KITCHEN CHECKS APP Comark Instruments is continuing its commitment to raising the standards in HACCP and food safety with the launch of the new BT250KC Bluetooth Pocketherm with Kitchen Checks App. The BT250KC Bluetooth Pocketherm is fast, accurate and water- proof. The quick responding probe with a 1.5-mm tip folds out to allow you to choose the best angle to take different temperatures at different points in the kitchen such as prep, cooking or cooling. Use the BT250KC Kitchen Checks App to manage all of your HACCP tem- perature recording. It's a simple way to automate data collection and eliminates the need for handwritten temperature records and years of paper storage. Checklists within the app ensure all pro- cedures are followed correctly and any non-compliances or critical control point variations are recorded and corrected. Via the cloud-based dashboard, you can immediately assess the implications of any incidents outside of pre-set parame- ters or just analyze the data at a later time. The Bluetooth Pocketherm uses a thermocouple sensor to transmit temper- ature data via Bluetooth to your Android or iOS phone or tablet. The data is in real time and is tam- perproof. The 1.5-mm thin tip probe with the sensor at the end offers speed of response and precise readings with only a tiny pinprick into the product. The Comark Kitchen Checks App is a free-of-charge smartphone app available in both the Apple and Google Play app stores. The easy-to-use app can be loaded with your HACCP plan and pairs via Bluetooth to the BT250KC thermometer. One of the many positives of greater awareness and attention to food safety and HACCP is that it has spurred innova- tion in temperature measuring and at the same time has driven down costs. Comark thermometers and temperature monitors are geared to the need for speed and accuracy of meas- urements, but always at afford- able prices. The BT250KC is just the latest model from Comark to bring the operator a convenient, fast responding thermometer that is accu- rate and reliable and can be used every- where in the kitchen to ensure that an operation is serving safe food and is adhering to their HACCP plan. A full Kitchen Checks system using the Comark KC wireless loggers offers 24/7 security and peace of mind that night or day critical temperatures are being monitored and recorded.
