GOURMET NEWS www.gourmetnews.com n JUNE 2016 n GOURMET NEWS 1 7 6 GN: Tell us a little more about the new line. MS: There are three new marinades: Turk- ish, Persian and Shawarma. There are also three new pilafs: Rice and Lentil, Burgul and Couscous. We decided to take our fa- vorite flavors from the Mediterranean and introduce them to the market here. GN: What inspired you to make these items? MS: We believe that the time is right for in- troducing a taste of Mediterranean to con- sumers who are craving new flavors. GN: Can you describe the flavors? MS: The Turkish marinade is a tomato- based marinade scented with garlic and cumin. It really is beautiful on chicken, but can be used on any protein. Our Persian marinade is a very exotic blend of sumac, garlic and fennel. It is also fantastic on poultry, but can also be used to dress veg- etables and salads. The Shawarma marinade is our crown jewel. Shawarma has become very popular in urban areas across the country and the world. Traditionally, you will find Shawarma as a stacked cone, like gyros, but with slices of lamb, beef or chicken on a ro- tisserie. Our marinade is a fool-proof way to get the perfect flavors of a traditional stacked cone in your own kitchen. Simply marinade any cut of meat and grill, roast or pan fry and you are on your way to making a delicious sandwich or wrap. As for the pilafs, we took some of the most iconic side dishes from the different regions, delicious comfort foods that are now ready to eat in 90 seconds. The rice and lentil pilaf is a staple through- out the different countries in the Mediter- ranean. Tender lentils in long grain basmati rice with caramelized onions – it tastes so good. Wild Garden (Cont'd. from p. 1) giving the final 10 years of aging to Teeling's finest Irish whiskey, and smokes it within hours of being emptied. This process ensures that it retains its rich whiskey and oak aroma, which are then subtly infused into the kiln- dried sea salt. This new fine-grain pure sea salt blends rapidly in recipes and delivers a rich, smoky flavor. San Francisco Salt Company recom- mends sprinkling it onto meat or using on burgers, though the possibilities are endless and are only limited by one's creativity and imagination. "We pride ourselves on constantly innovat- ing in order to supply our customers – chefs and home cooks alike – with the best-tasting gourmet sea salts," says San Francisco Salt Company's President Lee Williamson. "This particular variety combines three fantastic flavors – whiskey, smoke and salt – which come together in a surprisingly harmonious and palate-pleasing way." Like all San Francisco Salt Company prod- ucts, the Irish Whiskey Smoked Salt is avail- able in retail, bulk and wholesale quantities. For more information, visit www.sfsalt.com. "My parents started out with a vision that was based on a strong commitment to bring quality prod- ucts to consumers. We've maintained this com- mitment throughout our 50-year history. It is that vision as well as our integrity with respect to our customers, sales associates and our man- ufacturer partners which has allowed us to not only endure, but also continue to grow as an or- ganization." While the importing business can be challeng- ing and competitive, Cappel stresses that the company is very selective when it comes to choosing with whom it does business. "It never made sense to us to just partner with any man- ufacturer looking to get their foot in the door in the U.S. marketplace. We only establish rela- tionships with those companies which we be- lieve are reputable and offer only the highest quality products. We're very proud of the rela- tionships that we've formed and we look for- ward to many more productive and profitable years to come."
