GOURMET NEWS MAY 2019 www.gourmetnews.com EVERYDAY INDULGENCES 1 9 Connoisseurs love this honey specialty from the white blossoms of the enchanting leatherwood tree, only found in the Tas- manian rainforests. The texture is silky soft; the aroma at first powerful and then exotic flowery notes slowly unfold. Liaising with beekeepers in faraway countries has been a long tradition in the Breitsamer family. A particularly loyal col- laboration connects them with the Tasman- ian Honey Company, which provides them with this exquisite honey rarity exclusively. These honeys have an exceptional char- acter among honeys worldwide. They are a reflection of a unique natural heritage, many parts of which now are under the protection of UNESCO. The Tasmanian Honey Company bottles and seals their honey on location with the utmost care. The Tasmanian Honey Company, founded by a beekeeper (Julian) in 1978, has always had a marked passion for Tas- mania, whose wild forests are known for the honey they produce. The Tasmanian Honey Company recipe for success is its passion for bees, for nature and for its wonderful, rare leatherwood honey. The company con- siders it to be a distillate of pure wilderness. Julian's team takes complete care of their own colonies of bees by themselves, thus enabling them to bottle their wild honey, from a pure environment, gently and directly. With a flowery flavor, decora- tive jar and original product, bottled di- rectly in Tasmania, Breitsamer Original Tasmanian Leatherwood Honey will be available this summer. The millenarian olive trees of Granada give this oil a delicate scent of almond with, at first, a sweet sensation followed by a slightly bitter finish. The oil pairs well with Manchego cheese and Iberico ham. Cold pressed and unfiltered, this excep- tional organic olive oil comes in a unique packaging with an authentic golden label. While the bottle will stand out on your shelf and catch the eye of your customers, it is the exquisite marriage of the different olives that will draw them to come back for more. As Jossi did, Joe Widmer uses real brick to press his cheese, the same bricks his grandfa- ther used in 1922. After pressing, the cheese is placed in a salt brine for 11 hours, then moved to a warm, humid curing room where it is washed and turned daily for 7 to 10 days. It is then packed in parchment paper and foil. It reaches peak flavor at four to five months. This semi-soft cheese has a pleasant, earthy flavor that intensi- fies with age. Widmer's Aged Brick is also avail- able with caraway seeds. Suggested retail price is $12.99 to $15.99/pound. Widmer's Cheese Cellars www.widmerscheese.com
