GOURMET NEWS www.gourmetnews.com n JUNE 2018 n GOURMET NEWS 7 6 Golden Cannoli Expands Original Cannoli Chip Line By Ashley Caprio, New Business Develop- ment Manager, Golden Cannoli Shells Com- pany, Inc. Golden Cannoli has expanded its Original Cannoli Chip line with a new flavor and a new size option. Introduced in May 2018, Lemon is now joining the original three can- noli chip flavors of Powdered Sugar, Cinna- mon Sugar and Cookies & Cream. There is now also an option of Powdered Sugar and Cinnamon Sugar cannoli chips in peggable, single serve 2 ounce bags. Perfect for con- venience stores, deli counters and register placement, these 2 ounce bags are great for lunches and a quick, sweet snack. In 1970, cousins Francesco Bono and An- gelo Bresciani started their own Italian bak- ery to sell a variety of items to customers in the Boston area. One of the previous tenants of the bakery they purchased left a deep fryer in the back room, which is typically not a piece of equipment most bakeries have. They started creating cannoli shells for their own bakery use, and quickly, other local bakeries heard of their success. Soon, the cousins were produc- ing and distrib- uting cannoli to nearly all local bakeries, and quickly began to ex- pand production. Francesco and Angelo de- cided to sell their bakery and open Golden Cannoli, a manufacturing facility focused on cannoli shells, cannoli filling and other can- noli related items. They quickly gained pop- ularity, a reputation of having the highest quality products, and a dedication to cus- tomer service that no other cannoli company had. Many of the customers that started with Golden Cannoli back in the 1970s are still customers to this day. As always, Golden Cannoli has continued to innovate the can- noli category with grocery, bakery and food- service items. Available in addition to the new lines are traditional and chocolate cov- ered cannoli shells, cannoli filling, foodser- vice cannoli chips, cannoli crumbs for parfaits and ice cream inclusions, and pre- filled cannoli options. Rogue Creamery Wins Gold at World Cheese Awards Rogue Creamery's Rogue River Blue was awarded a Gold Medal at the 30th Annual World Cheese Awards in London, U.K. The World Cheese Awards is the largest and most respected competition of its type in the world. Two hundred and sixty judges gathered to taste and score more than 3,000 cheeses from 30 countries. "It is an honor to receive the news of Rogue River Blue's Gold Medal award. This is a win for Rogue River Blue and or- ganic Oregon and American made cheese," said David Gremmels, Cheesemaker and President. This was the fifth Gold Medal for Rogue River Blue at the World Cheese Awards Competition. It's hand wrapped in Syrah grape leaves, from local biodynamic, or- ganic Cowhorn Vineyard, that have been macerated in organic pear liqueur. Its for- ward, well-aged flavor tastes of brandy, fruit and burnt cream. The flavors of the Rogue Valley signature terroir include hints of sweet pine, wild ripened berries, hazelnuts, morels and pears. Echo Moun- tain Blue was also recognized at the Com- petition with a Bronze Medal; this is the eighth medal at the World Cheese Awards for Echo Mountain. Rogue River Blue: Made annually, start- ing on the autumnal equinox, it is pro- duced at the turn of the season and made with late-season milk. At this time, the cows graze on grasses renewed by cooler temperatures and make milk that is richer and higher in butterfat due to the advanced stage of the lactation cycle. It is this special milk, reflective of the unique seasonal influ- ences of the Rogue River Valley, which is the very essence of ter- roir. This is the French concept that well- crafted foods represent a certain special essence of a region: the soil, the climate and the interaction of herd and pasture. This blue, finished with pear-brandy soaked grape leaves, has a decidedly com- plex flavor that reflects the unique sea- sonal influences of the Rogue River Valley. Rogue River Blue has also won Best American Cheese and Super Gold at the 2012 World Cheese Awards in London and is a two-time winner, 2009 and 2011, of the Best of Show Award at the American Cheese Society Competi- tion & Judging. Three New Varieties, Two New Pack Sizes of Skinny Salamis In the year since its introduction of the Skinny Salamis™ line, MeatCrafters Inc, a USDA certified maker of artisanal salamis, sausages and duck breast prosciutto, had to double its production facility to handle the extraordinary growth. MeatCrafters, Inc has introduced three new varieties of Skinny Salamis this year, bringing to six the total va- rieties now available. Skinny Salamis are a savory meat snack with a healthy profile, the only traditionally cured salami in the fast growing grab 'n go meat snack category. Skinny Salamis have been recognized by the media and industry professionals for being a meat snack category disrupter, in that they are a cured, not cooked or processed meat snack. Manufactured in the familiar stick format, each salami is 16.25 grams of cured and seasoned beef, lamb or pork – no sugar and no carbs, gluten and dairy free, made in a nut-free facility under USDA su- pervision with top quality, heritage antibi- otic-free meat with no hormones added. The four packs are available in six vari- eties: Black Angus Beef, Street Cart Shawarma (lamb), Lamb Merguez, (new) Casbah (Pork-Mediterranean flavor profile- new), Spicy Chorizo (new), and Truffle Pork. Each stick has 5 or 6 grams of protein, and 40 or 45 calories per stick. The product has a nine-month shelf life and meets the crite- ria of multiple need-state consumers – clean label, keto, diabetic-friendly, gluten free, paleo, grain and soy free and more. "Skinny Salamis are an au- thentic, healthy alternative to grain-based, cooked and processed meat snacks and offer a distinctly different texture that we believe makes for a more flavorful eating experience," says Founder Mitch Berliner. "The growth in the 'good for you' protein snack category and the increased demand for single portions, prompted us to introduce a two stick pack and a one stick pack for sampling, give- aways or office snack kitchens," Berliner explains. The Skinny Salamis are a deli- cious high protein "grab and go" snack perfect for backpacks, lunch boxes, camping, hiking, biking, office snack rooms and fitness facilities. They are now available for gift baskets and at specialty retailers and gourmet and natural food shops, wineries, breweries and some airports throughout the United States. For more information, go to www .meatcrafters.com or contact Mitch Berliner at 301.440.8496.
