GOURMET NEWS AUGUST 2017 www.gourmetnews.com SFF WRAP-UP 1 8 Cheesemaker Guido Pallini's family has been breeding animals and dedicating it- self to agriculture in Italy for the past two centuries. Caseificio Inno al Sole is an ar- tisanal cheese factory located in Grosseto, in Maremma Toscana, that produces and sells buffalo mozzarella and other buffalo dairy products with the La Maremmana brand. The Pallini family recently developed an artisanal cheese factory to make cheese from their milk and a biogas renewable en- ergy plant. In the cheese factory, they ex- clusively use their own buffalo milk in order to produce buffalo mozzarella and other fresh cheese like burrata, ricotta, yo- gurt and a wide variety of aged cheeses, including Tramonto di Capalbio, Grosse- tano Stagionato, Fiore di Capalbio, Blu del Granduca and Francescano. "The cheeses made by La Maremmana are exceptional and we are incredibly ex- cited to have them at Seacrest," says Shawn Hockert, Director of Sales at Seacrest Foods. Tramonto di Capalbio (pictured) is one of Seacrest Foods' favorites! Pure Buffalo Milk with a white to orange rind and elastic paste, its taste gets definitively more in- tense as it matures. Grossetano Stagion- ato is tasty, slightly tart with a pleasant aftertaste. Fiore di Capalbio is a soft- ripened cheese. Think of a buffalo milk brie, but in a brick-like format, with the characteristic buffalo milk tang. Blu del Granduca, aged two months, is a medium hard blue that is mildly spicy. La Marem- mana's newest offering, Francescano, made a splash at its debut at the 2017 Summer Fancy Foods Show. Caseificio Inno al Sole supplies first class nutrition to their animals in order to obtain top quality cheese. The family has a strict con- trol on the supply chain and produces about 80 percent of what their animals eat. Their breeding philosophy aims to maximize the ani- mals' health and well-being by combining free-range conditions in the first years of life to ample spaces once animals are in their productive period. The family's roughly 700 buffaloes are raised free- range in the hills surrounding Capalbio, southern Tuscany, and are then brought to their dairy farm in Grosseto to give birth and enter milking production. Seacrest Foods is a family-run business that has been operating under the same name and the same principles since 1982. With a unique combination of hard work and open communi- cation throughout the supply chain coupled with strong and lasting relation- ships with vendors and cheesemakers, Seacrest has be- come a preferred distributor in the in- dustry, with a flexible attitude and respon- siveness that appeal to customers and their unique needs. In addition to providing a wide array of imported artisan products, Seacrest prides itself on the promotion of local farms of New England and New York. Ex- pansive and unique product offerings re- flect the diverse needs of the company's customers.
