CEM Corporation is excited to have recently accepted a 2017 IFT Innovation Award for the release of the revolutionary ORACLE Universal Fat Analyzer. The ORACLE is the first and only system that is able to accurately test the fat content of any food prod- uct in 30 seconds with no method development, calibra- tion or sample validation necessary. As one of the most expensive ingredients, and a large contributor to the quality and mouthfeel many con- sumers base their purchases on, food manufacturers have always required a fast and accurate fat analysis. The sustainability program has several components: a two- pronged community aspect (internal and external), an ecological component and a product-centric component, upon which the employee-owned company brings compelling products to market, which convey the founding values from over 40 years ago when it began. This program represents a company-wide commit- ment towards an attitude that has been its essence since the beginning, but formalizes strategy and logistics to achieve its goals and convey its message more effectively. The gluten-free trend is here and here to stay. According to Paul Graham, Associate Professor of English at St. Lawrence University and author of "In Memory of Bread," (a memoir about Celiac disease and an explo- ration of its cultural, historical and sociological signifi- cance), the gluten-free "trend" was worth about $10 bil- lion in 2016 and is expected to continue to grow in 2017. However, the interesting thing and common misconcep- tion is that "gluten-free," in truth, is not a trend, and it never will be. Sure, consumers today are going gluten- free to avoid heavy, over refined wheat based flours. From restaurant items to retail products, gluten-free foods have come a long way, with better texture and delicious fla- vor, helping to pave the way for long-term success of the segment. Some categories fare better than others when it comes to consumer satisfaction. One place that has had a hard time cracking the code on gluten-free is bakery, which has lagged behind in finding success with con- sumers. Gluten-free cakes and cookies with gluten-free substitutes used for common ingredients often fall short on texture and taste.
