GOURMET NEWS www.gourmetnews.com n JUNE 2017 n GOURMET NEWS 1 3 0 Morello Cherries, Caramelized Strawberry Star in Bissinger's New Chocolate Bars The two newest additions to Bissinger's sig- nature Chocolate Bar Collection – Tart Cherry & Cocoa Nib Crisp and Strawberry Caramel & Peanut – are the company's most spectacular confections yet. Crafted with Bissinger's proprietary cocoa blend, all chocolate bars in this collection are Rainfor- est Alliance Certified™, gluten free and con- tain no artificial flavors or colors. "These two new bars pair our rich, velvety dark chocolate with luscious fruit in exciting new ways," said Chief Chocolatier Dave Owens. The Tart Cherry Cocoa Nib Crisp is a perfect marriage of 75 percent dark choco- late, Morello cherries selected for their rich, complex flavor, and pure cocoa nibs to create a luxurious chocolate and fruit experience. A light sprinkle of puffed rice adds a deli- ciously subtle crispy-crunchy finish. The new Strawberry Caramel & Peanut is reminiscent of the classic flavors of a straw- berry ice cream sundae. Ripe California strawberries are delicately pureed in creamy caramel and enrobed in rich 60 percent dark chocolate. The light sprinkling of chopped, roasted peanuts adds another crunchy level to the tasting experience. Bissinger's signature European-style chocolate is classically crafted by Master Chocolatiers using the same technique and skills that have been handed down by generations of chocolatiers. Its proprietary cocoa blend, crafted with beans from the Côte d'Ivoire, yields a chocolate that's rich, velvety and never bitter. "We use the same for- mula for our base so everything tastes cohesive," Owens ex- plains. "They taste like they be- long in the same family." The other inspired flavors in this top-sell- ing 12-Bar Chocolate Collection include Co- conut Caramel, 75% Dark Chocolate, Coffee Toffee, Peanut Butter & Maple Oat Crunch, Banana Pecan Caramel, Dulce De Leche, 38% Milk Chocolate and 60% Chocolate With Almonds. When it comes to handcrafting chocolates and confections, Bissinger's has a 350-year his- tory on its side. The family was awarded the title of "Confiseur Imperial" (Confectioner to the King) from France's King Louis XIV in the 1600s. But Bissinger's is not one to rest on its laurels. The company's inno- vative confections and award- winning chocolate has been featured on Oprah, the Food Net- work and is a celebrity fan favorite. They can be found in grocery and specialty retailers across the country, including Whole Foods Market and Central Market, and Starbucks as well as department stores such as Neiman Marcus, Bloomingdales and Lord & Taylor. Adds Clam Fritter Mix to Lineup Virginia specialty food and gift purveyor Blue Crab Bay Co. recently added Clam Frit- ter Mix to its Shore Seasonings™ line. The mix's onion, parsley, chives, paprika, thyme and other spices lend phenomenal flavor to clam fritters or puffs. The shelf-stable mix was designed to make fritter preparation a no-brainer. All that the consumer needs in addition to the mix is an egg, two cans of chopped clams or a cup of cooked, minced clams, a little milk and some canola oil. The product, ideal for seafood depart- ments and gift baskets alike, joins three other mixes, two of which were added just two years ago. Chesapeake Crab Cake Mix has been a top seller in the Blue Crab Bay Co. stable for more than a decade. The newer Oysters Rockefeller and Clams Casino mixes are garnering praise for their ease of use in creating impressive appetizers. In addition, the popular crab cake mix has been transitioned into a larger stand-up pouch to bring all four seafood mixes into the same style of packaging. The pouches have a cutout for peg hanging or can sit free- standing on a shelf. The net weight of each packet is 2 ounces. Each type of mix comes in a case pack of six, and suggested retail is $3.99 a unit. Also offered under the Shore Seasonings name are the follow- ing seasonings, some available in both packets and glass jars, some available in packets only: Chesapeake Bay Seasoning, Crab Dip Blend, Clam Dip Blend, Shrimp Dip Blend, Salmon Seasoning, Steaming Spices for Shellfish, Lobster Dipping Blend, Blackening Blend, Herbs for Seafood, Garlic Herb Seasoning, Creamy Dill Dip Blend, Green Onion Dip Blend and Spinach Dip Blend. Founded in 1985 by Pamela Barefoot, Blue Crab Bay Co. has recently changed hands. New Owner and President Elizabeth Lankford purchased the company in De- cember 2016. "I have been a longtime fan of Blue Crab Bay's brand and high quality products," Lankford said. "I look forward to leading the company and expanding our na- tional reach. I also look forward to meeting our customers at upcoming trade shows." In addition to seasonings, Blue Crab Bay also offers coastal-inspired Bloody Mary mixers, Virginia peanut snacks, condiments, soups, dip kits, gift sets and stoneware.
