GOURMET NEWS www.gourmetnews.com n JUNE 2017 n GOURMET NEWS 6 2 Authentic Global Cuisine Created by Café Spice Café Spice, the creator of ready-to-eat pre- pared foods as fresh and flavorful as those found in a fine Indian restaurant, is debuting four new Indian meals at the Summer Fancy Food Show. Adding to its line of classic In- dian specialties are soon-to-be favorites like Butter Chicken Meatballs, Aloo Gobhi Curry, Coconut Chicken Curry and Bombay Dal Palak. With national distribution extend- ing coast-to-coast, Café Spice is poised to spice up the marketplace with its flavorful retail items. The family-owned company is known for its authentic Indian cuisine, created by cele- brated Chef Hari Nayak, who recently sat as a judge on Food Network's "Beat Bobby Flay" and has published several authoritative Indian cookbooks over his decades-long ca- reer. "Our chef-driven process, emphasizing clean and authentic ingredients, diligent care in preparation, and high standards, is what makes Café Spice stand out from the others," said Sameer Malhotra, Café Spice's co- Founder and President. "We've built our rep- utation on restaurant-quality meals with dine-at-home convenience." Stretching its wings last fall, Café Spice launched three Thai meals to the delight of customers, continuing to deliver on its mis- sion to prepare fine restaurant quality, au- thentic global dishes. Thai and Indian entrées and small plates offered by Café Spice taste fresh and flavorful, like dishes stirred up in a home kitchen. That's because they start with whole ingredients and spices, freshly ground for each batch, cooked and assembled according to Chef Hari's culinary specifications. Debuting at the Fancy Food Show, with a launch date in September, are four delec- table Indian entrées that are certain to be crowd pleasers. Sumptuous Butter Chicken Meatballs simmer mildly spiced meatballs in a fragrant, creamy tomato sauce. For those who desire a vegan meal, two new vegan dishes grace Café Spice's menu. The first, Aloo Gobhi Curry, inspired by a North Indian classic, combines mildly spiced cau- liflower with potatoes and red peppers, cooked in a light curry sauce. Next, widely popular throughout India, Café Spice prepares its own palate-pleasing ver- sion of Dal Palak made with several types of lentils, tomato and spinach and seasoned with a spicy garam masala, fresh ginger and garlic, turmeric and red chilies. Co- conut Chicken Curry rounds out the line with tender bites of chicken simmered in tomato-coconut curry with aromatic hints of cinnamon and clove. Each entrée is ac- companied by one of Café Spice's signa- ture basmati rice sides, either lemon or saffron. Cafe Spice's current Indian dishes include its signature Chicken Tikka Masala as well as classic vegetarian and vegan meals. Spiciness ranges from mild to hot, and all of the Indian meals are certified gluten free. "Global cuisine has become a regular se- lection in the modern shop- ping cart," said Malhotra. "But it is usually relegated to the frozen food section of markets. We bring freshness, clean ingredients and gour- met quality to global pre- pared foods, and as such, we are pioneering a niche that has growing consumer de- mand," he added. With a growing distribution network, Café Spice products are available in the deli or prepared foods sections of markets such as Whole Foods Market, Fresh Thyme, Harris Teeter, Shop Rite and HEB as well as natural food and specialty stores and co-ops. Based in the Hudson Valley area of New York State, the company is active in local job develop- ment and international economic develop- ment initiatives through the Whole Planet Foundation. St. Mang Bavarian Made Cheeses If you ever wondered where your food comes from, you'll have no doubt with the latest line of specialty cheeses introduced by Champignon North America, Inc. St. Mang Bavarian Made is a line of specialty cheeses all made in Bavaria, Germany, and include three soft ripened cheeses with savory flavor profiles as well as the traditional washed rind Limburger. All four cheeses are made with pasteurized milk sourced from local farms in Bavaria and are rBGH-free, lactose-free and made with microbial rennet. The cheesemakers at Bavarian cheese-pro- ducer Käserei Champignon have crafted the three soft ripened cheeses with herbs and spices perfectly incorporated throughout so every taste is full of flavor. St. Mang Bavar- ian Made Garden Herbs is an aromatic soft- ripened cheese with a creamy texture flecked with chives, parsley, sage, thyme, wild garlic and onion. Garlic and Chives is smooth and savory with fine flecks of fresh garlic and chive and is a must for garlic lovers. Mild Green Peppercorns, awarded a World Cheese Award in 2014, is a soft-ripened cheese dot- ted with brined whole green peppercorns that are soft to the bite, but yield a warm-spicy undertone. St. Mang Bavarian Limburger is a washed rind cheese with a reputation for its strong aroma. When young, however, Limburger is rather mild in aroma and flavor. Recognizing that more adventurous cheese lovers may prefer to age for a more robust flavor profile, the company has recently added an age in- dicator to the package to assist Limburger lovers in determining the ripeness of the cheese. The "How Bold Are You?" scale helps you deter- mine how mild or bold the cheese is based on the "Best by" date on the package. Whether it's a bold Limburger or a savory soft ripened cheese, St. Mang Bavarian Made cheeses are sure to be a hit during Ok- toberfest entertaining. Ok- toberfest is a traditional festival held in Bavaria every fall and is a celebra- tion of Bavarian culture. The festivities have long ago come to the U.S. and have gained in popularity in recent years, with thou- sands of Oktoberfest events held annually na- tionwide. This year, Oktoberfest menus will have a welcome addition to the traditional menu of beer and pretzels: Bavarian Made cheese! For more information, visit booth #1969 or go to www.champignon-usa.com. Color It, Texture It, Shape It, Taste It – Make It Extraordinary Formulated with professional chefs in mind, Mona Lisa's premium rolled fondant makes it a breeze to create colorful masterpieces. Made with high-quality, flavorful ingredi- ents, the fondant complements and enhances the flavors in your desserts while adding vi- sual pizzazz. It can be transformed into a wide variety of shapes and sizes, in original white or chocolate, or even tinted to make your own signature colors. Extended Workability Premium ingredients and unique formulation keep the rolled fondant pliable longer, allow- ing for extended working time with no crack- ing or tearing, even on shaped cakes. Bright and Colorful Quality ingredients deliver bright white color without the use of the food color additive ti- tanium dioxide, and the chocolate fondant is deep, rich brown. Stands Up to the Elements When exposed to excessively humid or dry conditions, the fondant stands its ground and does not become sticky, tacky or dry.
