GOURMET NEWS GOURMET NEWS n JUNE 2017 n www.gourmetnews.com 5 1 Cook True Indian Food with Truly Indian Organic An interview with Leanne M. Digan, Na- tional Account Executive, Truly Indian. GN: Tell our readers about the Truly In- dian™ Organic brand. LD: Truly Indian Organic offers a full line of USDA Organic Indian food products that make it easy to prepare great Indian meals. Truly Indian Organic is the perfect choice for the busy family to open the door to a culinary adventure of tastes and flavors. In addition to being USDA Organic, all these items are halal, kosher and vegetarian. GN: Tell our readers about your simmer sauces. LD: They are very easy to prepare. Truly In- dian Organic lets you prepare tantalizing, classic Indian recipes in a few easy and con- venient ready to serve steps. The four sim- mer sauces have simple cooking instructions: prepare your tofu, veggies or protein, add the simmer sauce and enjoy. It is that simple! GN: What about your vegetarian meals? LD: It only takes 90 seconds to get these meals ready to eat. They include: Kashmir Potatoes (Aloo Palak), baby potatoes in a spicy vibrant curd-based gravy; Delhi Potatoes (Aloo Matar), a po- tato seasoned with traditional fra- grant Indian spices; Bombay Chick Peas (Chana Masala), uniquely cooked garbanzo beans in an Indian spice medley; and Delhi Lentils (Dal Makhani), a lentil, kidney bean and tomato curry. GN: How spicy are they? LD: The spices vary in heat level and are typical of Indian cuisine. They are all very flavorful, but none of them are especially hot. GN: How many people can be fed with one jar? LD: The simmering sauces can be cooked with 1 pound of protein or vegetables, and would normally serve two to three people. The pouches can serve one person as a meal or two to three people as a side dish. GN: Are any of these items vegan? LD: All of the heat and serve meals are cre- ated classic vegetarian, but only three of the items are vegan: Kashmir Potatoes, Delhi Potatoes and Bombay Chick Peas. Delhi Lentils is prepared with dairy in the tradi- tional way. Visit Truly Indian Organic at booth #4916. For more information, call 708.473.4313 or email leanne@ziyad.com. Enjoy the Sweetness of Stevia The Food And Drug Administration (FDA) manages the rules and regulations governing food consumption, with the noble goal of keeping Ameri- cans healthy and safe. Its influence is felt every day in a variety of ways, but perhaps most famil- iarly, via the nutri- tion labels found on your favorite food and beverages. Check any nutrition label, and you'll find a row indicating the amount of sugar content. But what that label doesn't tell you is the amount of added sugar in your food or bev- erage. This has proven to be a harmful prac- tice, as a recent study showed that consumers are less likely to meet their daily nutrient needs when more than 10 percent of their daily calories come from added sugar. Com- bine this with the fact that added sugars ac- count for more than 13 percent of the average American's daily caloric value, and you have a recipe for disaster. Thankfully, the FDA has called for an end to this practice – in the near future, nutrition labels will be required to include a row clearly demarcating not only the amount of added sugar in grams, but the amount of added sugar as a percentage of your recom- mended daily caloric value. This is a long overdue change, and a change that stevia has been ahead of the curve on. A natural sweetener that originated in South America, stevia contains no calories and its leaves are up to 300 times sweeter than sugar. This means that you can use far less of it than you would sugar, all while en- joying the same sweetness you're accus- tomed to. With help from the FDA's latest nutrition label legislation, and stevia's nutritional value as a sweet, calorie free alternative to sugar, consumers will be able to have their cake and eat it too; healthy living through lower sugar consumption, all without sacri- ficing taste.
