Emile Henry has designed pieces exclusively for this, including the Bread Loaf Maker, Bread Cloche and Baguette Maker. Moisture in the dough stays inside the baking dish, gelatinizing starch on the outside of the dough. "We have stew pots for no-knead bread," says Steffen. "It creates a steam oven in your oven, which you need for crust." One of the big obstacles to consumer stoneware purchasing is worry over how to maintain the pieces. There is concern over heating pieces too quickly, how to clean them and whether or not unglazed materials will hold onto flavors after cooking. Jill Rembold, Special Accounts Manager at Reston Lloyd, recalls having to answer questions on the subject with a consumer. "A customer was af raid of dish soap getting in the pores. I told her, 'Don't worry, you'll be fine,'" she says. "One of the great things about Römertopf is the pores are so large because of the special clay from Germany, that makes it easier to release water or soap in your case. Some food stains can be boiled it out." While some stoneware materials are vulnerable to thermal shock, many brands have developed versions that are shock resistant and can be put over the open flame of a stovetop or grill. These pieces are made out of the same clay as oven pieces, just processed differently before glazing. "So in the new Römertopf BBQ line, the exact same clay is used but it has been coated, and it's been heated to the same temperature that ceramic cookware is," says Rembold. "In the grilling version you're not using the cookware for its ability to steam but for the all-natural convenience to use it on your grill."
