GN Healthy Cooking Oils from Carrington Farms BY LORRIE BAUMANN Carrington Farms is capitalizing on con- sumers' new understanding of the role of healthy fats in their diets with this year's launch of its Organic Ghee Clarified Butter and Organic Coconut Oil & Ghee. "We're seeing that ghee is where coconut oil was three or four years ago in terms of under- standing its benefits and why people would use it," said Carrington Farms Executive Vice President Debbie Shandel. "Fats are starting to get their due as a better-for-you product that you need to eat." Consumers are realizing that many food manufacturers had been catering to decades- old nutrition beliefs and advising that low- fat diets turn to sugar as a replacement for the fat in their recipes. "You need to get the flavor from somewhere," Shandel said. Newer research suggests that replacing all dietary fats with added sugars might not have been the healthiest solution, and the current "2015-2020 Dietary Guidelines for Americans" explains that Americans should be limiting the calories they're consuming from added sugars and saturated fats and re- ducing their sodium intake. Furthermore, the report advises that Americans should be choosing nutrient-dense foods and bever- ages across all food groups. This new thinking is propelling con- sumer interest towards healthier fats, and the Carrington Farms products offer them an alternative that meets their needs, Shan- del said. "You need good fats for your brain to operate. Both ghee and coconut oil fall into the category of fats that work for you, not against you," she said. "Coconut oil is a medium chain triglyceride that metabo- lizes in your liver, so it doesn't make you fat – it's a fat that your body needs.... We're try- ing to make those fats in a convenient fash- ion so the consumer can use them daily." The ghee, which is clarified butter, is made by heating dairy butter and then skimming off the milk proteins, leaving be- hind a shelf-stable fat that's easier than but- ter on the digestive systems of those who are lactose-intolerant, according to Shan- del. "The ghee is great for people who have lactose intolerance," she said. Carrington Farms is packing both its Or- ganic Ghee Clarified Butter and Organic Coconut Oil & Ghee into 12-ounce tubs, a handy format for the home cook or baker who's spooning out ingredients to measure their quantity. Pink Peppercorn Beef and Honey Habañero Chicken are launching nationally this month.
