The Knife Rack THE KNIFE RACK www.kitchenwarenews.com n MARCH 2017 n KITCHENWARE NEWS & HOUSEWARES REVIEW 2 1 WÜSTHOF Expands CLASSIC Collection WÜSTHOF has expanded its best-selling CLASSIC collection of precision-forged, full tang, Precision Edge Technolog y cutlery with the addition of the CLASSIC 4.5-inch Asian Utility Knife (model 4580- 7/12). The new knife will be available in April 2017 for $74.99 suggested retail. The CLASSIC 4.5-inch Asian Utility Knife features a uniquely curved straight edge blade, which allows it to be used as a mini cook's knife as well as a paring knife. The new knife is perfectly designed for both low rock cuts that require moderate heft and precise balance, and closer hand work that demands a razor sharp edge and exceptional agility. Sized and shaped for many food prep tasks, the CLASSIC 4.5-inch Asian Utility Knife performs effortlessly when cutting, slicing or dicing a variety of ingredients, including small- and medium- sized f ruits, vegetables and cheeses, and can even be used to trim meats and poultry. CLASSIC knives feature WÜSTHOF's patented Precision Edge Technolog y (PEtec). WÜSTHOF 's newest state-of- the-art technology, PEtec incorporates a new computer- controlled method for putting the edge on forged knives. With this patented technology, the knives are made 20 percent sharper to 14 degrees per side (10 degrees per side on Asian-style blades). This refinement doubles the sharpness retention because exacting angles and edges last longer than edges sharpened by hand. Additionally, the new edge craftsmanship includes a "sharp and grind" technology designed to gradually lessen the amount of steel running down the side of each knife, and f rom the spine to the knife's cutting edge. This further refinement enhances the blade's sharpness and edge-retention. For more information, visit www.wusthof.com. KN Kyocera Launches Shin Knife Series Featuring Ceramic Blade Kyocera has introduced its new Shin series of blades. The Shin series features an extremely durable Z212 ceramic blade, which remains sharp for twice as long as other ceramic blades from Kyocera, thanks to an innovative new production method. The knives from the Shin series also feature an ergonomic handle that enables an even more comfortable grip as well as greater control. Furthermore, there is a slight bend in the back of the Shin knives, which allows the blade to effortlessly slice through fish, meat, fruit and vegetables. The new series, which includes knives in five different sizes, became available in February 2017. Kyocera also offers a Shin series gift set, which comes packaged in a gift box. "The brand-new, innovative Shin ceramic knife series is an exciting new addition to our portfolio of high-quality, ceramic-based kitchenware," said Shigeru Koyama, President of Kyocera Fineceramics GmbH. "The Z212 ceramic blade is more robust, retains its sharpness for longer and has a timeless, elegant design." These ceramic blades are made of high- quality zirconium ceramic, an extremely light, high-tech material that is robust and non-corrosive and can therefore be washed in the dishwasher with no problem at all. The dense, smooth surface of the blade allows you to make a precise, wafer-thin cut. Since it does not transfer any metal ions, it does not leave behind any smell or taste. The new Shin series comes in a timeless, elegant black, which allows it to fit in with any kitchen, whether it's run by a professional or an amateur chef. Over the years and through the introduction of a wide variety of slicing tools, OXO learned a lot about user preferences and interactions and worked with new materials and manufacturing processes. The result is the OXO Good Grips Mandoline 2.0, which will be in stores in May. The new mandoline offers 17 slice thicknesses, from a very thin 1 millimeter to a thick 9 millimeter, as well as 21 blade settings, including straight, crinkle, French f ry and julienne cuts. One of the features that the product development team is the most excited about is a slicing platform that moves up and down in one parallel motion, which results in completely even slices with no dreaded wedges. Additional features include the blade being positioned on an angle, which helps slice thin-skinned and soft f ruits and vegetables like tomatoes, and a food holder that pushes food down with a spring instead of needing to use pressure. All of the blades are incorporated on the mandoline with no switching, unscrewing or replacing required. OXO also developed a new way to read the slice settings that allows for a top view, similar to an OXO Angled Measuring Cup. The French f ry thickness was inspired by McDonald's. To make sure the waffle fry cut was perfect, a waffle f ry simulator was constructed in computer-aided design to triple check the optimal thickness setting. The easy-turn knob is non-slip for easy adjustment. An indicator window clearly displays thickness settings f rom above in both inches and millimeters, and the spring-loaded food holder features a wide rim to protect fingers and stores on underside of the mandoline. The soft, non-slip handle provides a comfortable grip while the textured runway prevents food f rom sticking. The Japanese stainless steel blade is angled and can create straight slices or waffle cuts, and the julienne and f rench f ry blades are integrated for easy access.
