Brick cheese is an American orig- inal and is among the first washed rind cheeses produced in the U.S. It was developed in 1877 by John Jossi, a Swiss born cheesemaker. As Jossi did, Joe Widmer uses real brick to press his cheese, the same bricks his g r a n d f a t h e r used in 1922. After pressing, the cheese is placed in a salt brine for 11 hours, then moved to a warm, humid curing room where it is washed and turned daily for seven days. It is then packed in parchment paper and foil. It reaches peak flavor at four to five months. This semi-soft cheese has a pleasant, earthy flavor that intensifies with age. Widmer's Aged Brick is also available with caraway seeds. Suggested retail price is $12.99 to $15.99/pound. Over the past decade, the cheese in- dustry has had a significant amount of growth and innovation in the United States, particularly driven by consumer interest and demand for specialty cheese. It's an exciting community to be part of, and I'm positive you'll see that from the cheese companies you visit here at the show. You'll also get a feel for what continues to be on trend in the cheese industry. Here's what we're seeing: Bold Flavors The demand for heat has domi- nated the food scene for a num- ber of years and is still going strong. New and innovative cheeses with bold flavors con- tinue to emerge and grow in pop- ularity. Our new Sriracha Gouda merges the mellow and mild flavor of Gouda with the spicy, tangy- sweet, savory kick that is Sriracha – appealing to consumers' ap- petite for heat. American Originals Traditional concepts and old world cheesemaking techniques that originated elsewhere are tak- ing on a new life and character when reinvented with American ingredients and ingenuity. If you're looking inside the spe- cialty cheese case, you can't miss our new Roth Prairie Sun- set ® . It has a bright orange hue and is sweet with undertones of butterscotch. Authenticity Transparency remains a key pur- chasing factor, es- pecially for Millenni- als, who are willing to pay more for spe- cialty foods that are sustainable and or- ganic. Our new Or- ganics line features many of our award- winning Roth cheese varieties – Grand Cru ® Original, Havarti, Van Gough ® Gouda and Sharp Cheddar - made using fresh organic milk. Easy Entertaining From individually-wrapped snack- ing cheeses to pre-cut entertain- ing packs, consumers continue to buy cheese on convenience. The latest? Ready-made cheese for entertaining, like fondue and raclette. With our pre-made and easy to use Emmi Fondu, con- sumers can choose an original, Swiss cheese variety or family- friendly alcohol-free version. Indulgence Once snubbed, whole milk real but- ter and other dairy products are mak- ing their way back into our diets. Con- sumers armed with evidence that real dairy products are good for you are seeking new indulgences of their favorite foods. New Emmi Kaltbach Le Cremeux, debuted just this year, fits the bill. It's is a semi-hard cheese that's matured for four to five months in the Kalt- bach caves near Lucerne, Switzer- land, to give it creamy buttery taste, with a strong, complex aro- matic flavor.
