It believes it's time for cheese-inclusive products to enhance the shopping experience in the produce department. Formaggio won over creative palates in the produce department with its Betta line some years ago. There's the renowned Betta Bleu, Betta Feta and Betta Brie products, which included fresh ingredients normally found in the produce department. The Feta product was a medal winner with the Wisconsin Cheese Maker's Association's (WCMA) World Cheese Championship, and the Betta Brie has been featured on programs appearing on the Lifetime network. What's next? Could there be more? Enter: Creative Crumbles. Formaggio Brand's new product line Creative Crumbles is indeed crumbled cheese-based, but each flavor is mixed with bits and pieces of fresh produce, making it the perfect complement for cooking and dressing fresh vegetables. This is a way for consumers to add fresh produce along with crumbled cheese to any number of a myriad of dishes, rang- ing from vegan-friendly entrees to steaks and pasta. The unrivaled ease with which a kitchen novice can create this level of gourmet challenges the concept that one must attend the Culinary Institute to hit such an epi- curean homerun – every time. Four varieties make up the Creative Crumbles line, including: Feta Cheese mixed with fresh oregano, bits and pieces of onions and olives; Bleu Cheese with cranberries, fresh celery, pieces of carrots, fresh herbs and spices, red pepper; Ricotta Salata with bits of sundried tomatoes and fresh sweet basil; and finally, Cojita with fresh cilantro for a delightfully refreshing fla- vor profile. Each one is mixed in an infused drizzle for incredible flavor. When asked about his company's continued mission to expand its pres- ence in the produce department, Formaggio Brand's Founder, President and Chief Executive Officer, Anthony Mongiello, says that there's only so much you can do with crumbled cheese, and more and more he's noticing that people are mixing it with fresh produce to achieve amazing results. "I thought it was a product whose time had come and will bring together very neatly the habits of people in the kitchen when it comes to crumbled cheese and fresh produce. We're just helping them along by doing the work for them in a way that is incredibly easy to use, clean and sparks their personal culinary creativity." YOU MADE THOSE INTERNATIONAL SALES – NOW HOW DO YOU GET YOUR PRODUCT THERE? With an unyielding focus on quality and innovation in the perishable sector of the air freight business, Able Freight Services has become the largest air freight forwarder on the West Coast in terms of raw tonnage. Its recent $15 mil- lion investment in infrastructure and services positions the company for fur- ther growth, with enhancements in capacity and processes. "The perishables industry has shown tremendous growth over the past five years," explains Orlando Wong, Able Freight Services' Vice President. "It has been the bright spot in the overall air- freight industry." Lured by the growth of the perish- able sector, many airlines and forwarders have begun to claim expertise in the han- dling of perishable shipments, hoping to capture market share in this industry seg- ment. The ability to handle this time-crit- ical cargo in a competent manner goes much deeper than "flashy marketing pro- grams," notes Wong. "We have been consistently focused on the perishable sector since our incep- tion in 1992," says Wong. "Today we ship close to 100 million kilos of perish- able cargo per year to over 60 countries, and we have continually invested in all aspects of the business, raising the bar for service." Wong provides a few examples of Able Freight Services' recent invest- ments: New state-of-the-art refrigeration technology operating in all of its facili- ties: two in Los Angeles (LAX), San Francisco (SFO), Guadalajara (GDL) and two in Hawaii (HNL and KOA). Joint development of the Kold Kart™ refrigerated dolly, a proprietary technology that permits perishable ship- ments to be transported in a temperature- controlled unit between aircraft on the tarmac and airport cargo terminal. Kold Karts are designed with multiple-door access for ease of loading and come equipped with air ride suspension to min- imize vibration damage. Certification in the Safe Quality Food program (SQF2000), a prestigious requirement for the most demanding and quality-conscious shippers. Other certifi- cations include California Certified Organic Farmers (CCOF); Woolworth's Quality Assurance (WQA); HACCP; and the FDA Food Safety Modernization Act (FSMA). Development of process methodolo- gy for improved airline compliance to cold chain. The company's cold chain procedures are reviewed every six months to maintain its certifications and to meet cus- tomers and market needs. These invest- ments have posi- tioned Able Freight Services to respond to the most demanding require- ments of its cus- tomer base, says Wong. "This is the Able difference, and it's why the company has had the privilege of longevity in this critical industry," explains Wong. "Able Freight Services is always fresh, always able!"
