O C G S h o w D a i l y Tu e s d a y, Ju n e 7 , 2 0 1 6 1 4 PASTA CHIPS FROM VINTAGE ITALIA An interview with Jerry Bello, Pasta Chips. OSD: What was the inspiration for Red Veggie Pasta Chips? What makes them "red"? JB: Tri color pasta was always an aspira- tion for me with Pasta Chips. Obviously, our first offering was a pale colored chip mimicking typical pasta in color. I then went to work to develop the red and the green. The green was released last sum- mer, and this summer will see the release of our newest, vegetable infused chip: the Red Veggie. This chip is imbedded with red pepper and roasted tomato bits. Besides the basic flavor of the pepper and tomato, we added an element of grill- roasted flavor by literally having the tomato bits roasted. This makes for a very unique, sophisticated and desirable attribute to this chip. OSD: How are Red Veggie Pasta Chips different from Green Veggie? JB: Red Veggie is made with roasted red tomato and red pepper. Green Veggie is made with spinach, broccoli and kale. OSD: How does the Rosemary flavor fit with the existing flavors of Pasta Chips? JB: Rosemary is the logical extension of our deli flavors. The Pasta Chip line is intended to be paired with complementa- ry foods or dips. For this we look for fla- vors that would enhance the pairing experience. Rosemary is the type of spice that does that. A rosemary-flavored chip pops the flavor of almost any sharp cheese, hummus or cured meat. OSD: What other flavors of Pasta Chips are on the horizon? JB: We have developed pesto and oregano seasonings that will be consid- ered for release in 2017. We will evaluate these flavors with consumer panels later this year. OSD: What are your current best selling Pasta Chips flavors? JB: Since our original release, the garlic olive oil chips were always our leading selling item. But, since the release of the Green Veggie Pasta Chip last summer, we have seen this chip surpass the garlic chip in about 25 percent of our markets. Garlic is still No. 1, but Green Veggie is coming on strong. Pasta Chips are available in- store at Kroger, Wegman's, select Costco locations, A&P, Chamberlin's, DuaneReade, Harris Teeter, Hyvee, King Kullen, Kings, Mariano's Fresh Market, Meijer, Pick'n Save, Publix, Randalls, Roche Bros., Roundy's, Safeway, Schnucks, Shaws, Sendik's Food Market, The Fresh Market, Tops Friendly Markets, Vons, Walmart, WinCo Foods and other retailers nationwide. TREND-RIGHT RECEPTION CAKES CUSTOMIZABLE FOR YOUR BUSINESS It's not often that classic and trendy intersect, but the entertaining age is back: a return to partying like your par- ents did, with classic cocktails and retro refreshments. In its Top 10 Dessert Trends for 2014, The Food Channel ® listed "Layers" and "Small Batch Desserts." They may as well have said "Reception Cakes." These bite-sized layered cakes are the next big thing in weddings and other gatherings – a lot less labor-intensive and potentially more profitable than traditional fancy cakes. They're available in a variety of flavors, packaging and decorating options to meet the needs of your busi- ness, however large or small. The Reception Cakes concept begins with the classic French pastry, the Petit Four. With a history of making Petits Fours that dates back to the Rat Pack era, The Swiss Colony is right on trend with these icing-enrobed layer cakes available in six flavors: Vanilla, Double Chocolate, Lemon, Red Velvet, Pumpkin Spice and Carrot Cake. Made with luscious layers of moist cake and high-impact creme filling richly enrobed in sweet confection and adorned with hand-decorated lattice- work, Reception Cakes deliver towering flavor while remaining portably posh, and there's no high-fructose corn syrup or partially hydrogenated oils. With Reception Cakes, the pastry chefs at The Swiss Colony have enlarged their traditional Petits Fours to a size that's better suited to a sin- gle-serving dessert while maintaining the simple elegance and grab-and-go con- venience party guests will love. The Swiss Colony has the largest hand-decorating bakery in the United States, with a state-of-the-art facility in Monroe, Wisconsin, combining robotic efficiency and an artistic, human touch. It is GFSI certified, with the capacity to supply large retailers and the attention to detail that will satisfy small specialty stores. As adaptable as The Swiss Colony bakery is to the needs of its customers, so is the Reception Cakes program. Large grocers and specialty stores can continue to buy these sweet, layered treasures hand-decorated in display-ready clamshells. Custom labels are available, as well. Bakeries with decorating capabili- ties can get them undecorated in bulk or add their own decorations to customize the experience for their customers. Reception Cakes can be sold individually with a cup of coffee, or in platters or arrangements for weddings, showers, baby reveals, graduations, tailgating par- ties, office parties, birthday parties … the list is endless. MAKE TRACKS FOR HEALTHY SNACKS By JG Riley As my kids get older, I notice more and more how relieved I am that we kept a mostly healthy kitchen, one without too many empty-calorie snacks and fatty free-for-alls. I say this because I see the tendency of their friends to gravitate toward fried chips, sugary sweet cakey things and choco-stuff more often than not. Don't even get me started about how mostly everyone in the United States is supposed to be overweight these days. Including me. Formaggio Brand cheese products have been in my refrigerator for more than a decade because we love the results when cooking with its fresh mozzarella, with its meat and cheese rolls, fresh moz- zarella and provolone antipasto salads and now its pre-sliced meat and cheese rolls and the smaller rolled versions called Artisan Wraps™. Often times we would slice the fresh mozzarella and meat rolls into bite size medallions and morsels as snacks. Kids love them no matter what their age, and so do adults. I'm glad to report that Formaggio Brand has caught onto this trend of its loyal and growing fan base's snacking habits and have final- ly begun to roll out the quality fresh mozzarella snacks. First, there's the classic fresh mozzarella and cheese roll it 'rolled out' (truly sorry for the pun) about 20 years ago. Formaggio has just begun pre-slicing its rolls and have put those slices into a conven- ient individual pouch called Roll-Ups™ – there are five spirals per ez-open gusset bag in a 3.75-ounce package. All of our favorite Formaggio Brand meat and cheese varieties are accounted for – fresh mozzarella with capicola, Genoa salami, pepperoni, prosciutto, applewood smoked prosciutto and soppressata. Alongside the individually packed spirals are a snack version of Formaggio Brand's uber-popular afore- mentioned Artisan Wraps prod- uct appropriately named Stick- up's™. They are finger size sticks of fresh mozzarella wrapped in a piece of delicious Italian style deli meat. Same flavors as with the spirals. Six in each pack, making 4.5 ounces here. Put Formaggio's Roll-Ups and Stick-up's in your refrigerator, in the kids' bags or lunchboxes for lunch, put them in your bag for lunch – but no mat- ter what you do, if you want for you and your family and your customers to snack healthily, make tracks for Formaggio's new snacks.
