It is a singularly necessary rebuttal to celebrity chef Alton Brown's fa- mous objection to the single- use gadget. The colander does just one thing, and it does it very well. Sure, you could drain your boiled beans or pasta without it, holding your pot's lid against its rim while you tip it over the ink to let water drain out through a narrow opening – at the mere hazard of a hand burned by steam and the curl gone from your hair, but how much sim- pler it is just to dump the contents of the pot into a colander! Just as the colander earns its place in the well-appointed kitchen by the simple virtue of doing one job very well, so there are other gadg- ets that also earn their keep. The peeler, for in- stance. My kitchen has peelers the same way Harald Wusthof 's has paring knives (And do read the interview with Harald Wusthof on the front page of this month's Kitchenware News!) There's a Y-peeler, a straight swivel peeler, a julienne peeler and a pinch-grip peeler made by Victorinox that's just the ticket for destringing celery. Each of these gadgets has a particular designated task for which it is the ideal tool. Sure, we can all turn out an edible meal with a pot, a pan, a knife and a burner when that's what we really have to do. Most of us have done just that, whether in a college dorm room, a hotel room or over a camp stove. But when you're aiming for speedy, simple elegance; when you aspire to a cheese course, a crudite, an entree with a garnish and something sweet to fin- ish, the gadgets collection will offer a great deal of practical assistance.
