36 The Cheese Guide Vermont Farmstead Cheese Com- pany began as a community effort to save a local dairy farm from being repurposed in South Wood- stock, Vermont. Since then, VFCC's multi-breed herd, sustain- able dairy farming practices, and creative cheese makers have put a delicious Vermont twist on tradi- tional old-world cheese recipes and won numerous awards along the way. Vermont Farmstead's most cel- ebrated cheese is the Alehouse Cheddar which uses both Har- poon ® IPA and Dark beers. The re- sult is a deliciously complex cheese that is very cheddar for- ward but finishes with a strong hoppiness and lingering notes of nut and caramel. Alehouse Cheddar is popular at local restaurants for topping burgers, alehouse cheddar soups and mac and cheese recipes and is a favorite for recipes at VFCC's Vermont Mac & Cheese Challenge, which provides one of its cheeses to competing chefs at this popular annual event (www.vtmacand- cheese.com).
