RedTop, one of CalyRoad's unique aged goat cheeses, features a
dusting of sweet, smoked paprika before developing its bloomy
rind. The paprika lends a distinctive flavor to the cheese, making
it a welcome addition to any cheese board. Affectionately named
after Red Top Mountain where iron ore once was mined.
Inspired by the great Dutch cheeses, this creamy, semi-soft,
American Original boasts a flavor profile rich in nuttiness with
hints of sweet fruit. Though technically not a Gouda, it is
handcrafted in the traditional Dutch Gouda-style using farmstead
fresh raw cows' milk and a vegetable rennet.
