RDN: SternoCandleLamp celebrated the 100-year anniversary of the iconic Sterno™ brand in 2014. What's the most challenging thing about being at the helm of one of America's oldest and best known brands? DH: You mention the 100 -year anniversary, actually the company was founded in the 1890s in New York City. It was called S. Sternau & Company and made food serving equipment. 1914 was the year the first commercially available chafing fuel was produced and given the name Sterno. From there the company has grown into what we are today, North America's leading sup- plier of portable warming and tabletop lighting products. What are the biggest challenges? Making sure we don't rest on our past successes or become arro- gant because we have such a strong brand, always listening to our cus- tomers and keeping our new product and innovations pipeline full. We know every product we introduce is not going to revolutionize the industry. But what we do know is that every new product we introduce will be relevant and help- ful and problem-solving to our end-user customer. RDN: What's your favorite part of this business? DH: I love to see our products being used in the marketplace. There is nothing like attending an event where hundreds of guests are being served hot food and hot beverages from multiple catering lines and stations using Sterno Chafing Fuel. You can't help but feel the trust our customers have placed in the Sterno brand. That trust has been earned, not just by providing heat but ensuring food safety and food quality at important events for more than a century. RDN: Tell us about some of the new products SCL will be showing at NRA 2015. DH: The foodservice industry will be seeing a number of new products from us in 2015. The ClearDome Chafer Lid is a transparent, dome lid cover that fits over all standard full-size chafers. This product makes it possible to keep the food visible, covered and accessible throughout service. Our Fast Casual Catering Set provides nine complete dis- posable chafer units in a single case. NEW FAUX STONE AND BRICK SYSTEM PROVIDES REALISM AND COST SAVINGS The URESTONE series represents the next generation of synthetic faux stone and brick cladding products that are designed for the restaurant construction and remodeling industry. The URE- STONE is an innovative "Dual Density" composite panel system that combines a hard durable structural plastic surface followed with one to two inches of a high quality polyurethane foam. This system has the following features: Durability: The URESTONE's unique composite technology is extreme- ly durable and more resistant to damage compared to EIFS systems and conven- tional synthetic faux stone products. Coloring and Weatherability: The system uses the latest paint technology and a multi-step coloring process, pro- ducing realistic depths of colors and shading. The URESTONE system provides cost savings in a number of ways. First, the system has an R value of 5-6, which pro- vides a significant insulation value and energy cost savings. Secondly, it can be installed by a general carpenter crew rather than having to hire more costly skilled masons. Some fast food restau- rants have been able to remodel two to three restaurants with the URESTONE system for the price of previously using manufactured stone. The installation of its four-foot by eight-foot panels or the single piece wainscot panels drastically reduces inter- ruptions in the daily operations of the business in comparison to other stone and brick facade systems. The large size allows for getting the job done quicker and without all the mess typically associ- ated with masonry projects. In addition, installing the large manu- factured panels provides more consistency between projects and requires less oversight by the restaurant construction managers. A wide array of tex- tures is available, ranging from rustic weathered wood patterns, warehouse brick and pop- ular stone patterns and are all available as standard products. However, a final aspect of the URESTONE system that favors the restaurant industry is that Replications Unlimited has the ability to modify the panel size, stone and brick patterns and color schemes to match the designs of specific chain restaurants pres- ent or upcoming design requirements. For more information, visit booth #10123. PROCESS CONTROL AND FOOD SAFETY IMPLEMENTATION ENSURE QUALITY Many food safety tools do not provide a quick means of product identification. This is particularly true in the areas of receiving and production where accurate product identification and labeling contin- ues to present challenges for incoming and continuous monitoring of temperatures. These are critical control points in any HACCP program. Scan 'n' Temp is the first tool in the marketplace that fully and simply addresses these needs and fully integrates with other ICC Solutions offer- ing "cloud" data collection and reporting. Scan 'n' Temp simply combines in one handheld tool both temperature and barcode reading capability. Together a barcode scanner and a fixed and detach- able wireless temperature probe offer the ultimate in temperature data collection. Data is collected and sent to the cloud using WiFi or a Bluetooth gateway. Multiple probe configurations will be available. The program possibilities for this device are virtually limitless. Additional information such as equip- ment temperature and humidity can be integrated into the reports to create a comprehensive analysis of process con- ditions. Product safety and recall programs can be implemented quickly and simply. Using Scan 'n' Temp, each site scans products when received. This data is posted to the cloud thereby instantly reporting the location of all lot numbers. Scan 'n' Temp is programmed with the product part numbers and when the product arrives on the dock, the barcode is scanned. Scan 'n' Temp will instruct the user on what inspection to per- form, such as temperature, or physical inspection and the results are recorded and the data is sent to the cloud. If a recall has been triggered, Scan 'n' Temp will identify the item and instruct the user to mark and segregate the recalled product. With Scan 'n' Temp, a brand can define its HACCP schedule with prod- ucts, batch codes, temperature limits, corrective actions and testing parameters and the device will alert the user to per- form critical control point inspections. Inspections can be both scheduled and unscheduled. The user simply scans the barcode where the product will automat- ically display with all necessary meas- urement parameters. Corrective actions can be input at any time for wireless reporting that can be viewed on any tablet or mobile device. In a cook/chill process, the Scan 'n' Temp can inter- face with Integrated Control's i.Print to generate a label that marks the start of the batch process. The device will alert the user when to temp, scanning the barcode will ensure batches are marked and measured correctly. Wireless data collected will be reported via the cloud. For foodservice sites that have daily menu changes, the barcode scanner can be used to quickly create a CCP customized for the day. Barcodes that are printed are scanned to create a quick menu.
