The new Salter Touchless Tare scales bring a professional, restaurant feature to the home chef – the Touchless Tare. The Add and Weigh feature in scales allows the user to weigh multiple foods or items in one container, zeroing out (tare) the scale after each food is added to just weigh the new food. On standard food scales, the zero or tare function is completed by pressing a button. But hands can be messy and slippery during food prep and pressing the button can get the scale even messier. That's why Touchless Tare is such a convenience! Simply wave your hand over the sensor and the scale zeros out easily. This Touchless Tare feature is included on two Salter scales: Salter 3830TT features an expanded 30 pound capacity but measures to an ultra-precise 0.01 ounce increment throughout the entire range. A large 8.5-inch by 8.5-inch glass platform is a robust 8mm thickness to easily han- dle foods up to 30 pounds, yet is surprisingly sleek over- all. This scale can easily han- dle fine increments required for baking, and weighing a turkey to cal- culate cook times. Soft touch control but- tons are easy to operate and make clean up a breeze. Suggested retail is $59.99. The Salter 3872TT includes the Touchless Tare sensor on a rectangle clean glass platform with touch control buttons – no grooves to collect debris or cooking liquids. Featuring an 11 pound capacity in 0.1 ounce increments, this scale will handles most kitchen weighing tasks with ease. Suggested retail is $39.99. Both scales include: 1) the Salter Aquatronic ® feature which also "weighs" liquid ingredients in fl oz and ml – no need to get a measuring cup, the scale does that measuring for you. 2) Clean glass platforms that resist staining and flavor carry over. 3) Auto or manual shut off. 4) U.S. to metric conversions by the touch of a button. 5) Batteries included. Both the Salter 3830TT and 3872TT are available now. Visit the Taylor/Salter booth #S2000. THE THIRD WAVE OF COFFEE AND TEA There's been a tremendous change in the look and feel of coffee and tea shops in the past five years. Electrics have been replaced with people hand pouring coffee or tea. Brands like Blue Bottle, Intelligentsia, DAVIDsTEAS and others are creating new experiences for coffee and tea lovers. The experts at Canada's coffee and tea equipment specialist ESPRO weigh in about what's hot and what's not in specialty brewing. "We see three big trends," explained Bruce Constantine, President of ESPRO. "First, there is a growing appreciation for high-quality and direct- from-origin of the coffee and tea. Second, the methods and equipment in use by aficionados has changed dramat- ically, and very quickly, with an empha- sis on manual methods and precise con- trol of brewing. Third, there is a surging appreciation in America for tea." ESPRO knows a thing or two about making high-technology coffee and tea gear. "The trendiest tea and coffee shops, Michelin starred restaurants and hotels are adopting our gear in their service. When both Starbucks and Blue Bottle can agree on some- thing, you're getting somewhere," Constantine said, explaining that the ESPRO Press launched in both brands this year, and is now available at both Williams-Sonoma and Sur La Table locations nationwide. What is the right line- up of gear for a house- wares or gift-shop? "There are several items needed to cater to this major trend, and only a handful of small- er brands that matter. The kettle in your assortment should have precise tempera- ture control. Bonavita makes a great one. Steer consumers to a good burr grinder – Baratza is excellent, and Krups and Breville are also good. Include one of the manual brewers – Kalita, Hario, Chemex and Aeropress. And include ESPRO's French Press and Travel Press. I know it sounds biased to include us in this list – but if you search our brand you will see we have earned the right over the past 10 years!" "Finally, don't overlook train- ing your staff," Constantine cau- tions. "People are brewing $30/lb coffees and teas with the precision that they cook a delicate soufflé. Your staff needs to be able to teach the customer how to make their best tasting cup." Visit ESPRO at booth #S4074. THE EVOLUTION OF COOKWARE: THE ROCK BI-CLAD NON-STICK LINE Canadian home and housewares brand Starfrit is introducing The ROCK Bi- Clad Cookware. Featuring a visually stunning combination of a durable stainless steel exterior with Starfrit's signature rock-like interior, The ROCK's ultra-hard surface will never scratch, warp or corrode. Starfrit uses a patented, permanent surface treatment that hardens and strengthens the cook- ware while creating a denser surface area. This small pellet impact technol- ogy, unique to Starfrit, modifies the surface of the pan, and coupled with a high performance PFOA free nonstick, results in food essentially hovering on The ROCK's speckled textured surface when cooking. Even the most delicate of foods will slide off with ease. In response to rave reviews for the original The ROCK classic cookware, Starfrit designed The ROCK Bi-Clad Cookware with the consumer in mind. The combination of beauty and strength of high polished stainless steel with the unparalleled nonstick performance of the ROCK "provides a totally different cook- ing experience from any other pan," it "browns meat beautifully," is "so com- fortable to use" and "cleans with just warm water." "Starfrit has watched the ROCK gain customers in a truly organic move- ment since the introduction of the origi- nal. As the five star reviews continue to come in, we knew a Bi-Clad Stainless Steel design was the natural evolution for those who prefer the professional per- formance of stainless steel," said Juanita Coumbias, International Sales and Marketing Director of Starfrit USA. Developed for all cooking techniques from sautéing to pan roasting, The ROCK Bi-Clad Cookware is designed to perform on electric, gas and induction ranges, and multi-tasks in the oven and even under the broiler.
