NATURALLY HEALTHY www.gourmetnews.com n MARCH 2015 n GOURMET NEWS N H 6 0 Central Milling's Living Sprouted Grain Central Milling has introduced a new prod- uct to the baking world: Living Sprouted Grain, a living mash of sprouted grain that it believes provides more health and baking possibilities than sprouted grain flour. The plentiful health benefits of sprouted grain can be somewhat diminished through the drying and grinding process of turning it into flour. Central Milling Living Sprouted Grain is carefully milled at an optimal tem- perature for maximizing nutritional and en- zymatic activity, ensuring that its inherent health benefits remain as intact as possible. The grain is then vacuum sealed, frozen and delivered to your bakery. Sprouted grain has a growing sci- entific body that supports its ability to have better digestibility, a lower glycemic index, a higher availability of nutrients, and makes you feel less bloated during digestion. Living Sprouted Grain is more than a healthy alter- native; with its maximized nutritional value, amazing taste and texture and malleable for- mat, it represents a highly functional addition to any diet. Central Milling has a special in- terest in helping bakers develop sprouted grain-based formulas for cus- tomers – including athletes and outdoor enthusiasts – who de- sire functional foods (like power breads and energy bars) that help them "do the things they love to do." Central Milling has a re- search and development baking center that provides training for companies and bakers interested in Living Sprouted Grain. It can assist with product develop- ment, formulation, baker training, nutritional analysis and marketing. Tripling Capacity of Dedicated 100 Percent Organic Production Facility It has been 26 years since the jam kettles at Crofter's Food Ltd. on the shores of Geor- gian Bay in Parry Sound, Ontario first fired up and started making jam – preserving the fresh taste of summer fruits in a jar. This however, was to be a preserve for a new generation with a focus on taste and nu- trition. Under the watchful eye of Founder Gerhard Latka, Crofter's innovative recipe for a more nutritious preserve using one- third less sugar, organic ingredients and only the best tasting fruit was established. It may seem simple to just use less sugar, but making jam is an art that involves simple ingredients working together in fascinating ways to become the preserves we love with that distinctive "jammy" texture and taste. Take away one-third of the sugar, and exclu- sively use organic ingredients and suddenly it becomes a much more specialized craft – one that Crofter's has perfected over 26 years. Jam lovers and industry insiders took no- tice, and as the organic trend grew in popu- larity, Crofter's Organic became known as the organic specialist. Today the Latka fam- ily is proud to operate a facility that is 100 percent dedicated to organic production, and is excited to see the next chapter of the Crofter's story unfolding. Demand for low-sugar, organic preserves and fruit spreads has required a brand new state-of-the-art 47,000 sq. ft. facility with triple the capacity and the capability of pro- ducing larger pack sizes. The new facility will be unique in North America. Rarely do facilities of this size and caliber exclusively produce organic. Completion is scheduled to be in the summer of 2015, and the first jars should be coming off the line in Sep- tember. The current facility in downtown Parry Sound, Ontario has gone through many upgrades since the early days back in 1989 to become one of the most modern organic food facilities in its own right, and will continue to operate in conjunction with the new facil- ity. In today's global market, food safety is always top of mind, and as part of the ex- pansion, Crofter 's quality control and management system will be enhanced to include an integrated production, inven- tory handling and quality management system to promote efficiencies and trace- ability. Crofter's food safety program is SQF Edition 7.1 Level 2 audited for the Global Food Safety Initiative, and an on- site lab outfitted with the latest equipment tests and verifies the absence of pesti- cides of all incoming ingredients, and fin- ished product quality. For Crofter's, food safety isn't an inten- tion, it's a require- ment. From source to con- sumer, Crofter's is ded- icated to setting the quality standard for products, process and sourcing in the fruit spread and preserves in- dustry. With continued commitment to inno- vation, it aims to make a positive impact on the health and well-being of the environ- ment, growers and consumers for years to come. About Crofter's Organic Crofter's Organic is an Ontario-based, fam- ily-owned manufacturer of premium fruit spreads.
