Fresh Origins Introduces SavorTree, a Line of Premium Herbs and Spices An interview with David Sasuga, Owner, Fresh Origins. GN: Tell our readers about Fresh Origins. What's your main line of business? DS: Fresh Origins is America's leading grower of Microgreens and Edible Flowers. In addition the company also produces spe- cialty vegetables and has developed a line of Premium Herbs and Spices called Sa- vorTree™. GN: What would you say makes Fresh Ori- gins unique? DS: Fresh Origins is no ordinary farm. The company's success is based on growing hon- estly. That means growing in the best cli- mate most suitable for the crops, as opposed to forcing things to grow in less than ideal climates or factory farmed with unnatural ar- tificial lighting. Growing honestly in the ideal climate for the crop results in superior quality and flavor. Fresh Origins is located in the picturesque rolling hills of North San Diego County, where the mild sunny weather is the world's best climate for growing Mi- crogreens, Edible Flowers and Premium Specialty Herbs. Natural sunshine and mild temperatures result in the best flavor, and longer shelf-life. Fresh Origins has stayed true to its principals for 20 years and has be- come America's leading producer of ultra- specialty crops including the new SavorTree Premium Herbs. GN: Tell our readers about your new product line, SavorTree. DS: Fresh flavor is the essence of SavorTree. These herbs are nurtured with great care and expertise, allowing them to thrive in our beautiful San Diego climate. When the herbs reach their absolute peak of flavor, they are hand harvested, blossom by blossom and leaf by leaf. Only the most flavorful portions of the herbs are chosen for harvest. Within min- utes of being picked, they are immediately brought in to our herb drying room right here on the farm. Every step is designed to retain the intense fresh flavors of our SavorTree Premium Herbs and Spices. GN: What distinguishes SavorTree from the competition? DS: SavorTree Premium Herbs and Spices are grown right here in the United States under careful scrutiny by USDA trained third-party inspectors who inspect and mon- itor the food safety practices employed by the farm. Strict adherence to sanitation and food safety is one of the hallmarks of Fresh Origins farming activities. These domesti- cally grown herbs are both safe and deli- cious. GN: Who are your target end-users? DS: The idea for SavorTree Premium Herbs was based on providing top professional chefs with a flavor ingredient that surpasses the typical dried herbs and spices they have been accustomed to using. The first item that was developed was the SavorTree Basil Blossom. This was introduced at the annual StarChef's International Chef's Congress in New York just this past October. Every year StarChefs.com honors the industry's most in- novative products with its Innovator Awards. These awards recognize companies that offer a product that is innovative in its mission or design, and instrumental in helping chefs and culinary professionals succeed in their en- deavors. As always, the 2014 nominees were voted on by an elite group of chefs at the In- ternational Chefs Congress and SavorTree Basil Blossom was this year's Innovator Award Winner in the Food and Beverage cat- egory. This award was sweet validation of the SavorTree concept. GN: Where can customers find and purchase SavorTree? DS: Currently the SavorTree Premium Herbs and Spices are available only from select on- line gourmet retailers, and later will be rolled out in upscale grocery stores. This StarChef's Innovator Award winner will be a great addition to any kitchen. For more information, visit www.fresh origins.com, email david@freshorigins.com or stop by booth #4838. Shun Cutlery's New Dual Core Kiritsuke Wins 2014 Kitchen Knife of the Year The Blade Show awards represent the pinna- cle of knife-industry awards. The winners are selected by an overwhelming vote of indus- try members, including representatives from Shun's competitors. Winners are judged on a range of criteria – from design, innovation and function to craftsmanship and quality. "We are very proud to be recognized by our respected peers in the knife industry for our ability to create top-quality knives and innovative designs," said Jack Igarashi, Chief of North American Operations, Kai USA Ltd., and Managing Director of Kai Corporation, the makers of Shun Cutlery. Shun Dual Core knives feature a layered and roll-forged Damascus blade, made from two premium-quality stainless steels. Sev- enty-one alternating micro layers of high car- bon, high chromium VG10 and VG2 stainless steels are welded together and roll- forged to produce a finer grain in the steel and to give it both strength and beauty. The laminated steel is then hot forged to create the herring- bone pattern that allows the layers to alternate along the cutting edge. During normal use, the two steels will wear at dif- ferent rates creating micro serrations along the her- ringbone edge so that the Dual Core's extremely sharp edge feels sharp longer. Etched laminations in the blade re- duce drag, helping food release from the blade, gliding through each cut quickly and easily. The blade is thin, light and strong. Traditional Japanese octagon- shaped handle in ebony Pakka- Wood complete the look of this beautiful knife. The first styles in this exquisite new line include the Shun Dual Core Kiritsuke (model VG0017), MSRP $375, the Dual Core Hone- suki (model VG0018), MSRP $313, and the Dual Core Utility/Butchery (model VG0019), MSRP $325. For more information about carrying Shun Dual Core, please contact your Shun Cutlery representative or call 800-325-2891.
