Sea Salt Superstore came to the Summer
Fancy
Food Show with a number of new prod-
ucts, including a new foodservice product line,
new packaging for its cooking bricks and sev-
eral new salts, such as its Asian ginger sea salt
and sriracha pepper sea salt. According to
company President Scott Mackie, Sea Salt Su-
perstore develops new products based on the
feedback it receives from show attendees.
"We're
always looking to add things that con-
sumers are interested in," he said.

Celebrating the company's 30th anniversary at
this year's Fancy Food Show, Cayman Islands-
based
Tortuga Rum Cake Company exhibited
its
celebrated rum cakes, confections and 100
percent Jamaica Blue Mountain coffee. Owner
Monique Hamaty-Simmonds also announced
the imminent launch of several new products,
including
coconut rum pearls – sweet balls of
chocolate with a coconut center. "Our original
gold rum cake is still our number one product,
but launching the confections is our new
focus,"
said Hamaty-Simmonds.

Meat, Pâté or Seafood Category for its Fermín
Ibérico smoked pancetta, the team at
Wagshal's

sampled the new
product at this year's show. "The taste speaks
for itself," said Wagshal's owner Aaron Fuchs.
"When you start with a good product like the
Ibérico
pig, using it in a recipe, it makes every-
thing better." The new smoked pancetta is
made from authentic Iberian pigs, butchered
and brought to the United States, where the
meat
is cured and salted.
