Health-conscious proponents of maple syrup argue that it is high in antiox- idants, zinc and various immune-boosting minerals. In addition, maple syrup may not spike blood sugar in the same way that re- fined sugar does. Still, despite the innovations maple products have recently undergone, what ultimately makes maple such a sought- after ingredient and flavor in specialty foods today may be the fact that so many consumers have a deep, even romantic attachment to a product that they have grown up with all their lives. Maple has an element of nostalgia built into it, evoking memories of fluffy buttermilk pancakes served up at family brunches and wintertime sweets shared around a Christmas tree.
