GOURMET NEWS JULY 2014 HOLIDAY UPDATE 1 8 Busha Browne's Jerk Seasonings Create Authentic Jamaican Taste Busha Browne is most famous for an all- purpose jerk seasoning rub made from a selection of crushed herbs and spices, comprised predominantly of escellion (spring onion), Scotch bonnet peppers and pimento (all- spice) berries. Jerk is the authentic Jamaican method of cooking. The term refers to a method of grilling meats using a combination of highly spiced sea- sonings. The meat is then cooked over a pimento wood fire. The process is a slow and savory one that traps all the spice and juices inside the meat, resulting in an aromatic smoked flavor. Oven-baked jerk is the newest method and is currently taking hold in North America. For oven-baked jerk, you simply season your favorite meats with Busha Browne's Authentic Jamaican Jerk Seasoning, add some cook- ing oil, and bake at 350 F until done. Busha Browne's Authentic Jamaican Jerk Seasoning is the traditional hot and spicy seasoning paste specially compounded for jerk meat, fish, vegetables and tofu. Used prudently prior to cooking, this sea- soning provides the most pungent flavor and an absolutely irresistible aroma. Ariston Preserves are made by a local family using fresh fruit, not pre-frozen blocks of pulp. The preserves are pro- duced in accordance with what fruit is in season at the time. For example, since the apple harvest will begin from Sep- tember to October, this is when Ariston produces its Apple and Cinnamon Pre- serves. This method allows Ariston to use what fruit is naturally ripened by na- ture and not last year's frozen fruit, which hinders taste and quality. Current flavors in Ariston's product line include Apple and Cinnamon (a.k.a Apple Pie in a Jar!), Strawberry, Peach, Apricot, Orange Marmalade and Fig. The company also offers olive tapenades and sundried tomato pesto, as well as a wide range of infused olive oils and vine- gars. All of Ariston's prod- ucts naturally c o m p l e m e n t cheese.
