Refined salt, such as you find in most supermarkets, is mechanically harvested from salt mines and is often treated with chemicals to remove minerals. The salt is then heated to evaporate the water, which disrupts the molecular structure, and then subjected to a fluidized-bed dry to remove the remaining moisture. Lastly, anti-caking agents are added along with dextrose, known as refined sugar, as a stabilizer so that iodine will stay with the salt. In contrast, unrefined salt is not exposed to chemicals. The salt is harvest- ed without the use of heavy machinery or explosives, and contains minerals and elements associated with its origin. The addition of naturally occurring magne- sium and potassium, which are meant to be ingested with the sodium chloride, are essential for a healthy immune system. "Unrefined salt is a whole food product which is easily utilized by the body," explains Dr. David Brownstein, author of "SALT Your Way to Health." Historically, salt has been a highly prized sub- stance across all cultures and continents. Yet today, excess sodium intake has been blamed for a variety of health prob- lems. However, according to Dr. Brownstein, unrefined salt provides the proper balance of minerals for nourishing the endocrine system. He further notes that low-salt diets are associated with elevated insulin levels, the elevation of cholesterol and lead to mineral deficiencies and the develop- ment of chronic disease.
