Has this led to your new offering, the Just Add Lettuce line Bits & Pieces? AM: Since we launched Just Add Lettuce, our 3D version, a couple years ago, I've learned a lot about the produce department. What I've learned is that price is a very important factor. Price is important in all departments but especial- ly in produce. In an attempt to create a second line for Just Add Lettuce, I was keeping that in mind. When I was creat- ing Just Add Lettuce Bits & Pieces, which is like my original but much small- er, less chunky pieces, I asked myself questions like, 'How can I get a little more lettuce coverage with a great taste and yet do something different from the original Just Add Lettuce in terms of fla- vor profile?' PSD: So the Bits & Pieces flavor offer- ing will be different than the original Just Add Lettuce 3D? AM: Yes, very different. It wouldn't make sense to duplicate the flavor pro- files we made before. No repeats. We FORMAGGIO "JUST ADD LETTUCE" LINE INTRODUCES BITS & PIECES strive to give the cus- tomer a variety. So we came up with some truly wonderful and diverse flavors. There are three: Tomato & Basil, Roasted Pepper & Roasted Garlic and Bleu Cheese & Berries. The berries are cranberries. We made these very different from the flavor profiles of the original Just Add Lettuce 3D line. That said, the flavors we've cre- ated are incredible. These are a little more tangy than the original line. There's a bit more of a vinegar presence and the pieces are just that – bits and pieces. Smaller than the original, about the size of a bacon bit. PSD: Aside from different flavors, how is Bits & Pieces different from the origi- nal Just Add Lettuce 3D? AM: You'll find more coat- ing of the lettuce. More cov- erage, with lots of bits and pieces in every single bite. Because you do indeed get more coverage, the result is a flavor explosion in your mouth with every bite. It still has the three-dimensional aspect to it, so you can crunch down on a red pepper, you will bite into a tender tomato, chew down on the roasted garlic – and when you get that fresh cranberry aspect after the rush of bleu cheese, you realize there is absolutely nothing else like it.
