This is especially true of California Dairies, Inc. butter. The dif- ference is found in the freshness of the milk which is passed on to make the but- ter, an essential factor that extends beyond the butter making process. From the raw material supply (fresh milk) to the end product, CDI's process of making butter is centered on quality. Manufacturing butter is quite simple; cream is churned until the fats separate from the liquid (i.e., buttermilk). However, while the butter making process is the same for all butter brands, it does not guarantee that all butter is cre- ated equal. Many companies do not have the supply of fresh milk needed to church fresh butter and must purchase these raw materials elsewhere. For example, some companies buy frozen milk and have it transported to plants where it is then processed into individual cuts for retail sale. This adds a substantial amount of time to when the cream is churned to when the butter reaches the store shelf, reducing the flavor and freshness.
