From 2006 to 2011, the indus- try saw an average annual growth of 5.6 percent and today, frozen yogurt shops are not the only ones offering the frozen treat. This unit holds the same amount of product in the mix hoppers and freezing cylinders as does the BH7480. The BT7180 is the single-flavored countertop unit. It has one mix hopper that holds 9.5 quarts (9.0 liters) of product and one freezing cylinder that holds 2.0 quarts (1.9 liters). Each individual canister has a capacity of 12.7 quarts (12.0 liters) of product. Grease theft from outside storage con- tainers can cost a restaurant thousands of dollars each year. The Envirotub allows restaurants to store used fryer oil in a container (18- inches wide by 32-inches high by 28- inches deep) that fits under most two- and three-compartment kitchen sinks. When the fryer needs to be emptied, the Envirotub, fitted with four non- marking polyurethane wheels, can be easily rolled right to the fryer for hot oil disposal. The Envirotub can with- stand fryer oil of up to 300 degrees and holds up to 53 gallons of used fryer oil.
