The age-old problem is finally solved. Being in the industry since 1991, I have dealt with this problem firsthand. That's at least two tons of paper a month – more than 24 tons a year. It's no wonder that waste reduction is the USDA's highest priority, when it comes to going green. More than 7,000 people work at the 2.2 million square foot USDA complex in DC – and throughout the sprawling campus the department's Green Team has found ways of eliminating waste. According to the USDA's Waste Minimization and Recycling Program, "Waste minimization requires the elimination or reduction of the generation of waste at its source, that is, before it can become waste." As the largest building on the National Mall and "the seat of Department leadership," USDA officials want their headquarters to be "a model facility for others wishing to implement waste reduction and waste minimization programs," according to the agency's Waste Minimization Plan. In what looks like the famous food pyramid, the USDA's Green Team uses a triangular Solid Waste Management Hierarchy and Source Reduction and Reuse at the "most preferred" peak of the pyramid. The "least preferred" method is dumping trash into landfills because that contaminates groundwater and pollutes ENVIROTUB INC. Factor in the cost of cleaning the spill that a thief may leave behind or the fines imposed by local code enforcement and the financial loss could result in the tens of thousands of dollars. There have been efforts by container makers and restaurant owners to strengthen and even lock up outdoor containers, but thieves have become more desperate with their tactics. Thieves have resorted to cutting padlocks and drilling holes through plastic or re-enforced metal lids to access the oil. Despite any of these increased security measures, used cooking oil stored outside will always remain an open invitation for theft and a mess to clean up. The solution? The USDA also tries to avoid sending its trash out to be burned because incineration pollutes the air with harmful gases such as nitrogen oxides and sulfur dioxide along with trace amounts of toxic mercury compounds. The USDA has developed a detailed plan to reduce waste, including: Annual trash sort to determine the effectiveness of the recycle program, installing new recycle containers, stopping junk mail, implementing a battery and personal electronics recycling program, encouraging the use of reusable cold drink and coffee containers and educating employees. The USDA took a major step toward eliminating waste by installing some two dozen XLERATOR® high-speed, energyefficient hand dryers in its restrooms, giving people a choice between paper and hand dryers. Over time the agency plans to install hand dryers in more restrooms throughout the facility. The USDA reports seeing an imme- diate 50 percent reduction in the use of paper towels in restrooms where energyefficient hand dryers are also being used. This is eliminating two tons of paper towel waste in 2011 alone. The wide mouth opening of the Envirotub allows a typical pumping hose to be inserted. The Envirotub can be emptied of all of its contents in about 60 seconds. The Envirotub is designed with a raised lip around the perimeter of the top to prevent spillage or overflow during oil transfer. To help prevent any potentially rancid odors from escaping, the Envirotub comes with an innovative twist-on lid that helps secure odors but still allows venting of heat being dispersed from the oil inside of the container. Kitchen staff risk being burned while carrying hot oil to outside containers and the areas where these containers are kept can be dirty, slippery and dangerous especially at night.
