If one looks at Tanzanian beans, they are covered with vanillin crystals that migrate from the middle to the surface while the beans are being dried. I get irritated when people tell me that they do not want to use the "peels," which is essentially the entire bean without the seeds—what a waste! I always use the entire bean.
