Two Recipes from Bone Suckin' Sauce Beef Brisket in the Oven Prep Time: 10 mins Cook Time: 7 hours 30 mins Total Time: 7 hours 40 mins Yield: 8 Ingredients Bone Suckin' Steak Seasoning & Rub, 3 Ta- blespoons Beef Brisket, 8-10 lbs. Instructions Preheat oven to 225 degrees. Trim brisket and remove most of the fat cap, leaving about 1/4 inch of fat (excess fat won't allow the rub to penetrate the meat and won't render (melt) during cook- ing). On the meaty side; slice off any silver skin, which is a tough, thin membrane. Smaller cuts may not have excess fat, but do check meaty side for silver skin. Sprinkle Bone Suckin' Steak Seasoning liberally all over the brisket. Place a thermometer in the thickest part of the brisket . Place brisket on a small rack to hold up in the air in baking pan and cover with alu- minum foil. Cook until meat reaches internal tempera- ture of 203 degrees. Notes You can put the leftovers in resealable bags and freeze or if you have a vacuum bagging machine you can do that. If you vacuum bag the brisket, you can re- heat easily in the oven at 250 degrees by put- ting it in a baking pan and putting about two inches of water in it. It takes about two hours to reheat this way. Put the meat (wrapped in foil) into the cooler. Close cooler and leave meat there for one to two hours, until you are ready to eat. Slice meat against the grain after separating the flat and point sections (each has a different meat grain direction). Be advised that there is a period called "the stall" where the meat temperature tends to stay a little over 150 degrees for a long period of time (during this time moisture in the meat rises to the surface and cools the meat by evaporation). Temperature is "stuck" up to five hours, depending on size of brisket. Bone Suckin' Ribs Recipe Prep Time: 10 mins Cook Time: 3 hours 30 mins Total Time: 3 hours 40 mins Yield: 4 Ingredients Bone Suckin' Sauce, 1 – 16 oz. jar Baby Back Pork Ribs, 5 lbs. Instructions Preheat grill or oven to 300 degrees. Put ribs in shallow pan and baste with Bone Suckin' Sauce. Cover ribs with foil. To Grill: Place pan with ribs on the grill for three hours at 300 degrees. Uncover, baste with Bone Suckin' Sauce. Raise grill temp to 350 degrees. Cook 1/2 hour uncov- ered but still in pan, basting again after first 15 minutes. To Make in Oven: Bake three hours in oven. Uncover, baste with Bone Suckin' Sauce. Raise oven temperature to 350 de- grees. Cook 30 minutes, uncovered, basting again after first 15 minutes.
