It is produced in Trento, a region char- acterized by im- mense valleys, vast mountain forests and pure water re- sources. This moun- tainous area of northern Italy is known for its great passion for gastro- nomic culture and the uniqueness of its products. The milk used to produce this cheese comes from cows that are healthy and strong, mainly the Brown Alpine breed. Once processed, the cheese is aged for a minimum of 18 months. For the first nine months of this, the cheese is ripened in the dairy. Trentingrana is a semi-fat cheese, with a reduced lipid con- tent, making it ideal for the mod- ern diet.
