Brooke had started investi- gating the culinary uses and history of grains herself, and so they started looking for seeds for heritage grains that they could plant and grow themselves on their 230-acre farm. They found emmer and einkorn, both ancient varieties of wheat, and both primarily imported into the U.S. from Italy. "They both had incredible properties that weren't just about flour. They had multiple uses. They were incredibly nutri- tious with a very differ- ent profile from modern wheat," Lucy said. After an extensive search, they found enough emmer and einkorn seed to grow, mill and sell as flours, baking and pancake mixes, cracked and split whole grains and as handcrafted blends like Organic Einka & Lentil Blend and Organic Potlatch Pilaf. "Potlatch Pilaf is a blend of split emmer and split wild rice that's a hearty, earthy, wonderful pilaf," Lucy said. "The emmer has a sweet, nutty flavor, and the wild rice has an earthy fla- vor." The Organic Einka & Lentil Blend is made with organic whole-grain einkorn blended with French Lentils. "Both have similar cook times," Lucy added. In either case, she likes to sea- son it with oregano, basil, thyme and rosemary and then add fresh parsley at the end. Although some customers are at- tracted to these grains merely because they're fans of whole grains, those who are sensitive to gluten are particularly drawn to them, since some who are sen- sitive to the gluten that's found in mod- ern wheat don't have the same problems with the heritage grains, which are genet- ically quite different from the modern wheats that are descended from them. "We have a lot of customers with gluten sensitivities who come to us because they're educated about the pesticides that never get cleaned off the grain," Lucy said. "Eating organic, especially with sta- ple foods, is so important. A lot of our customers with gluten sensitivities tend to do better with these grains.... They have a much simpler chromosome struc- ture, which translates to how easily it di- gests and how accessible the nutrition is to our systems."
